Description

These sticky, spicy Korean Gochujang BBQ Ribs are the ultimate summer staple for busy families who refuse to compromise on bold, smoky flavor. Ingredients

2 full racks Baby Back Pork Ribs
1/2 cup Gochujang (Korean Red Chili Paste)
1/4 cup Honey or Brown Sugar
3 tablespoons Rice Vinegar
1 tablespoon Fresh Grated Ginger
4 cloves Minced Garlic
1/4 cup Soy Sauce (Low Sodium)
2 tablespoons Toasted Sesame Oil
Toasted Sesame Seeds & Scallions for topping


Instructions

  1. Preheat your oven to 300°F (150°C). Remove the thin, papery membrane from the back of the ribs and pat the ribs dry
  2. In a medium bowl, whisk together Gochujang, honey, soy sauce, rice vinegar, sesame oil, ginger, and garlic. Set aside about 1/3 of the sauce for glazing later
  3. Season the ribs lightly with salt and pepper. Rub the remaining sauce all over both sides of the ribs. Wrap each rack in aluminum foil to create a sealed pouch
  4. Place the foil-wrapped ribs on a baking sheet and bake for 2.5 to 3 hours until tender
  5. Open the foil pouches carefully and increase the oven temperature to 425°F (220°C). Brush the reserved sauce over the ribs
  6. Place the ribs back in the oven, uncovered, for 5-10 minutes until the sauce bubbles and chars slightly
  7. Let the ribs rest for 10 minutes, then slice between the bones and garnish with scallions and sesame seeds

Notes

For extra flavor, marinate the ribs in the sauce overnight.

Use a microplane for ginger and garlic to avoid bitter chunks.

Store any leftovers in an airtight container in the refrigerator for up to four days.
