A proposed sliceable lentil-walnut dinner loaf with sautéed mushrooms, oats and a thin tangy tomato glaze. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A loaf that should hold a slice
A lentil loaf needs contrast: soft cooked lentils, small toasted walnut pieces, finely chopped vegetables and a tangy tomato top. This version presses those ingredients with oats and hydrated ground flaxseed into a nine-by-five-inch pan. It is designed as a savory dinner main, not a meat imitation or a salad compressed into a loaf tin.
The formula is not kitchen-tested. Sliceability depends on how much water remains in the cooked lentils and mushrooms, the pan dimensions and the rest after baking. Its two-hour working total assumes the lentils are already cooked and drained; cooking them from dry would add a separate, undisclosed block of time.
Build flavor without a wet center
Brown or green lentils keep more visible shape than red lentils. Measure two and a half cups after cooking and draining well, not two and a half cups dry. Mash about half to help bind while leaving the rest whole for texture. Finely chopped toasted walnuts add a little bite, and a cup of old-fashioned rolled oats absorbs some moisture.
The skillet vegetables must soften and shed their water before entering the mixing bowl. Eight ounces mushrooms can produce much more liquid than expected, so cook until the visible liquid evaporates rather than stopping at a fixed minute. Finely grated carrot and diced onion should be distributed evenly so the loaf slices without large chunks pulling it apart.
Two tablespoons ground flaxseed thicken with five tablespoons water during prep. Tomato paste and tamari season the interior; ketchup, balsamic vinegar and just a teaspoon of maple syrup make a separate thin glaze. Do not pour the glaze into the loaf mixture or add an unmeasured half cup of sauce. This base contains walnuts and soy; oats and packaged condiments must be checked for individual dietary requirements.

| Maple syrup, for glaze | 1 teaspoon | Balances vinegar. |
Step-by-step method
- Heat oven to 375°F and line a 9-by-5-inch loaf pan with parchment overhang. Stir 2 tbsp ground flaxseed with 5 tbsp water and let thicken while preparing vegetables. Use 2 1/2 cups cooked, thoroughly drained brown or green lentils; do not substitute 2 1/2 cups dry lentils.
- Heat 1 tbsp olive oil in a skillet. Cook 1 diced onion, 1 grated carrot and 8 oz finely chopped mushrooms over medium heat about 8–10 minutes, until soft and visible mushroom liquid has cooked off. Stir in 3 minced garlic cloves for the final minute. Cool a few minutes.
- Mash roughly half the lentils in a large bowl, leaving the rest intact. Mix with 3/4 cup finely chopped toasted walnuts, 1 cup rolled oats, hydrated flax, vegetable mixture, 2 tbsp tomato paste, 1 tbsp tamari, 1 tsp thyme, 1/2 tsp fine salt and 1/4 tsp black pepper. Press into the lined pan. Stir 1/4 cup ketchup with 1 tbsp balsamic vinegar and 1 tsp maple syrup; spread the glaze thinly over the top.
- Bake at 375°F approximately 50–60 minutes until the top looks set and the edges pull slightly from the pan. Rest in the pan about 20 minutes, then lift out with the parchment and cut into eight slices. Test cohesion and actual time before publishing; this is a newly proposed formula.
Mix and bake the working formula
Line a nine-by-five-inch pan with enough parchment to lift the cooled loaf. Hydrate the flax while sautéing onion, carrot and mushrooms in olive oil. Add garlic late so it does not burn. Let the hot mixture cool briefly, then combine with lentils, walnuts, oats, hydrated flax, tomato paste, tamari, thyme, salt and pepper.
Press the mixture firmly into the pan without turning it into a smooth purée. Whisk the three glaze ingredients and spread only a thin layer over the top. Bake at 375°F approximately fifty to sixty minutes, until the top is set and the edges pull slightly away. A thermometer alone cannot prove that this egg-free binder will slice well; the cooling test matters.
Let the pan stand at least twenty minutes, lift the loaf out and cut eight slices with a clean knife. If it crumbles, note whether lentils were wet, mushrooms retained liquid, or the mixture was under-mashed. A tested revision might change the binder, but the published recipe should not pretend this first ratio is confirmed.
Troubleshooting the first bake
A soft, steamy center points to moisture before it points to a need for extra flour. Drain cooked lentils, cook mushrooms until visible liquid is gone and use a correctly sized pan. Overcrowding with large vegetable pieces can also make slices break across the grain.
A dry crumb may mean the lentils were excessively dry or the loaf stayed too long in the oven. Record the ingredient weights, drained moisture and baking time for a useful second trial rather than adding a vague splash of liquid. An overly sweet top may come from a sweet ketchup brand; the balsamic-maple balance should be tasted in the final test.
The glaze can darken at the edges before the center looks set. If this happens, a loose foil tent may protect it, but that change itself needs trial because covering also traps steam. The target photograph shows a thin glaze and individual lentil-walnut texture, not a smooth bean pâté.
Serving and storing
Serve a slice with Chefly's sautéed green beans and, if desired, its honey-roasted sweet potatoes for different textures. The sweet-potato page turned up as a broad WordPress body match in the lentil-loaf search, but it is not the same recipe. Check guests' nut and soy needs before offering this loaf as a universal holiday main.
Cool leftovers promptly and refrigerate in a covered container. A precise storage and freeze-thaw window has not been established for this proposed recipe; test whether reheating keeps a slice cohesive before promising a make-ahead centerpiece. Keep glaze quantity consistent in the article, card and eventual photo.
Questions about the ingredients
Can I use canned lentils?
Potentially, after rinsing and draining very well. Measure the cooked amount and test salt and moisture; the brand will matter.
Can I leave out the walnuts?
Not without a replacement trial. Walnuts supply bulk and texture, and a nut-free claim would require a fully reassessed recipe and cross-contact check.
Can it be assembled ahead?
A pre-bake assembly or freezer method is not verified for this working formula. Cook, cool, store and reheat only after testing that the final loaf holds together.
