Description

Mediterranean Baked Fish with Tomatoes is a simple yet flavorful dish that combines fresh fish, vibrant tomatoes, and aromatic herbs, capturing the essence of Mediterranean cooking.


Ingredients

4 fillets White Fish (about 6 oz each)
2 cups Cherry or Grape Tomatoes
1 small Red Onio
3–4 cloves Garlic
½ cup Kalamata Olives
¼ cup Fresh Basil
1 tbsp Fresh Oregano
3 tbsp Extra Virgin Olive Oil
1 Lemo
½ tsp Sea Salt
¼ tsp Black Pepper


Instructions

  1. Preheat your oven to 400°F (200°C) and grease a large baking dish with olive oil
  2. In a bowl, mix the halved tomatoes, sliced onion, minced garlic, olives, basil, oregano, olive oil, juice and zest of half a lemon, salt, and pepper
  3. Pat the fish fillets dry and place them in the prepared baking dish
  4. Spoon the tomato mixture over the fish fillets and bake for 15-20 minutes until the fish is opaque and flakes easily
  5. Garnish with lemon juice and fresh herbs before serving
