Description
Mediterranean Steak and Hummus Bowls are vibrant, filling, and surprisingly easy to prepare. They combine savory steak, creamy hummus, and fresh vegetables to create a delicious and satisfying meal that looks and tastes like a restaurant dish.
Ingredients
1 lb Sirloin or Flank Steak
1 cup Hummus
1 large Cucumber
1 pint Cherry Tomatoes
1/2 small Red Onio
1/2 cup Feta Cheese
1/4 cup Fresh Parsley
1 whole Lemo
2 tbsp Olive Oil
1 tsp Dried Oregano
Instructions
- Take your steak out of the fridge about 20 minutes before you cook it. Pat it dry and season both sides with salt, pepper, and oregano
- Heat a skillet over medium-high heat and add olive oil. Once hot, lay the steak in the pan and cook for 4-5 minutes per side for medium-rare
- Remove the steak from the pan and let it rest for 10 minutes
- While the steak rests, dice the cucumber, halve the cherry tomatoes, and slice the red onion. Toss them with lemon juice and a pinch of salt
- Spread a generous smear of hummus in serving bowls. Add rice or greens if using
- Slice the rested steak against the grain and place over the hummus. Add the veggie mixture beside the steak
- Sprinkle feta cheese and fresh parsley on top, and finish with a squeeze of lemon juice
Notes
Store components separately for best freshness.
Steak can be served cold or at room temperature.
