Ingredients
1 tablespoon Olive Oil
1 pound Lean Ground Beef
1 large Onion, chopped
2 cloves Garlic, minced
3 Carrots, peeled and diced
2 Celery Stalks, diced
4 medium Potatoes, peeled and cubed
1 (28 ounce) can Crushed Tomatoes
4 cups Beef Broth
1 teaspoon Dried Thyme
1 teaspoon Dried Rosemary
½ cup Frozen Peas
½ cup Frozen Cor
Salt and Freshly Ground Black Pepper to taste
Fresh Parsley, chopped for garnish
Instructions
- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook until browned
- Add the chopped onion and minced garlic, reduce heat to medium, and sauté until softened
- Stir in the carrots, celery, and potatoes along with dried thyme and rosemary. Cook for another 5 minutes
- Pour in the crushed tomatoes and beef broth, stir together, and bring to a gentle boil
- Reduce heat to low, cover, and let simmer for 25-30 minutes
- Stir in the frozen peas and corn and simmer for an additional 5 minutes
- Season to taste with salt and pepper, garnish with parsley, and serve hot
Notes
Feel free to substitute lean ground beef with turkey, plant-based crumbles, or lentils.
You can thicken the stew naturally with mashed potatoes or a cornstarch slurry.
