Description

1.5 lbs Chicken Breast
16 oz Potato Gnocchi
1.5 cups Chicken Broth
1/2 cup Heavy Cream
1 large Fresh Lemo
4 cloves Garlic
1 tbsp Fresh Thyme/Rosemary
2 cups Spinach
1/2 cup Parmesan Cheese
2 tbsp Olive Oil/Butter


Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper. Add them to the pan in a single layer and brown for about 3-4 minutes per side. Remove the chicken from the pan and set aside
  2. Sauté Aromatics: In the same pan, add a tablespoon of butter. Add minced garlic and fresh herbs, sautéing for about 60 seconds
  3. Deglaze and Simmer: Pour in the chicken broth and lemon juice, scraping up the bits from the bottom of the pan. Add uncooked gnocchi directly into the liquid and bring to a gentle boil
  4. Thicken the Sauce: Reduce heat to medium, stir in heavy cream and lemon zest. Let the gnocchi simmer for about 5 minutes until the sauce thickens
  5. Combine and Finish: Add the browned chicken and fresh spinach back into the pan, stirring until the spinach wilts and chicken reaches an internal temperature of 165°F. Stir in Parmesan cheese until melted
  6. Serve: Adjust seasoning as necessary and serve immediately

Notes

For a vegetarian option, omit chicken and add mushrooms or sun-dried tomatoes with vegetable broth.
