Description

1.5 lbs Boneless, Skinless Chicken Thighs
2 lbs Yukon Gold or Red Potatoes
3–4 tablespoons Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Dried Rosemary
1 teaspoon Dried Thyme
1 teaspoon Smoked Paprika
1 teaspoon Salt
½ teaspoon Black Pepper
2 tablespoons Fresh Parsley (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper
  2. Pat the chicken dry and cut the potatoes into 1-inch cubes
  3. In a bowl, combine chicken and potatoes, drizzle with olive oil, and add all the seasonings. Toss until well-coated
  4. Arrange the mixture in a single layer on the prepared sheet pa
  5. Roast for 25-30 minutes, then flip and roast for another 15-20 minutes until chicken is cooked and potatoes are tender
  6. Let rest for 5 minutes, garnish with parsley if desired, and serve
