Description
One-Pan Steak Fajita Gnocchi combines the bold flavors of steak fajitas with the comforting texture of gnocchi, creating a warm, hearty meal that's perfect for shared moments with loved ones.
Ingredients
1 lb Flank Steak or Sirloin, thinly sliced against the grai
16 oz Potato Gnocchi, shelf-stable or refrigerated
3 large Bell Peppers (Red, Green, Yellow), sliced into thin strips
1 medium Red Onion, thinly sliced
2 tbsp Fajita Seasoning, store-bought or homemade
1/2 cup Beef Broth, low sodium preferred
2 tbsp Olive Oil, divided use
1 cup Shredded Mexican Blend Cheese or Monterey Jack
1/4 cup Fresh Cilantro, chopped for garnish
1 whole Lime, cut into wedges for serving
Instructions
- Heat one tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat. Season sliced steak with one tablespoon of fajita seasoning
- Sear the steak for 2-3 minutes until browned, then set aside
- Add the remaining tablespoon of olive oil and sauté bell peppers and onions for about 5 minutes
- Push vegetables to the sides, add dry gnocchi to the center, and toast for about 2 minutes
- Pour in beef broth and remaining fajita seasoning, stir, cover, and simmer for 4-5 minutes
- Stir the steak back into the pan, mix well, and top with shredded cheese. Cover for 1 minute to melt
- Garnish with cilantro and lime juice before serving
Notes
You can substitute steak with chicken or shrimp, and use gluten-free gnocchi for a gluten-free version.
