Description

One-Pot Creamy Taco Mac and Cheese is a comforting and easy dinner that combines the flavors of tacos and macaroni and cheese, all made in one pot for minimal cleanup.

Ingredients

Scale

1 lb Ground Beef
1 packet Taco Seasoning
2 cups Elbow Macaroni (dry)
2 cups Beef Broth
1 cup Milk (Whole or 2%)
2 cups Shredded Cheddar Cheese
1/2 cup Salsa (Mild or Medium)
1/2 cup Diced Onions

Instructions

  1. Brown the Ground Beef and Diced Onions in a large pot over medium heat until meat is no longer pink
  2. Sprinkle Taco Seasoning over the cooked beef, stirring for about a minute
  3. Pour in Beef Broth, Milk, and Salsa; stir in Elbow Macaroni, ensuring pasta is mostly submerged
  4. Bring to a gentle simmer, cover, and cook for 10-12 minutes, stirring occasionally
  5. Check for pasta doneness; if needed, cook 2 more minutes until liquid is absorbed
  6. Turn off heat and stir in Shredded Cheddar Cheese until melted

Notes

For a vegetarian option, consider substituting ground beef with black beans or a meat substitute.

Shred your own cheese for a smoother sauce.
