Parmesan Cheese Straws. Crisp puff-pastry Parmesan cheese straws with black pepper and an egg-washed twist. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A crunchy savory tray addition
Parmesan cheese straws make a crisp contrast to soft dips and rich appetizers. This version folds grated cheese and a thin layer of Dijon into cold puff pastry, cuts narrow strips and twists them so the layers become visible after baking.

This is a working recipe. One commercial sheet may have different dimensions from another, so twenty long straws and a twenty-minute bake need verification. The seventy-minute total includes a shaped-pastry chill and a brief cool, not the package's thawing time.
Keep pastry cold and cheese fine
Use thawed but still cool puff pastry. A sheet that is brittle from the freezer will crack, while warm limp dough can lose its layered rise. Roll only enough to reach roughly ten by twelve inches; overworking can compress the lamination.
Fine Parmesan adheres better than coarse shreds. Spread one tablespoon mustard in a thin film and keep the cheese inside the fold. Pepper is the only additional spice, so a photographed herb or sesame topping would be inaccurate.
Purchased pastry may contain wheat and milk, while the wash adds egg and Dijon adds mustard. Check the actual brands; a vegan cheese or eggless wash would be a new formulation, not an automatic substitution.
Ingredients for 20 straws
| Ingredient | Amount | Use |
|---|---|---|
| Frozen puff pastry, thawed cold | 1 sheet | Approximately 14–16 oz; check package dimensions. |
| Dijon mustard | 1 tablespoon | Thinly spread on pastry. |
| Finely grated Parmesan | 3/4 cup | Freshly grated for even adhesion. |
| Freshly ground black pepper | 1/4 teaspoon | Across cheese. |
| Large egg | 1 egg | Beat for wash. |
| Water | 1 teaspoon | Mix with egg wash. |
Step-by-step method
- Unfold one cold thawed puff-pastry sheet on a lightly floured surface and roll to roughly 10 by 12 inches. Spread 1 tbsp Dijon thinly over one half, then scatter 3/4 cup finely grated Parmesan and 1/4 tsp pepper evenly. Fold the bare half over filling and press gently.
- Cut across the folded pastry into approximately twenty 1/2-inch-wide strips. Twist each several times and place on two parchment-lined sheets, pinching ends lightly to hold shape. Beat one egg with 1 tsp water and brush exposed pastry, avoiding puddles under the twists.
- Chill shaped straws 20 minutes. Heat oven to 400°F near the end. Bake approximately 16–20 minutes, switching sheet positions if necessary, until fully puffed and deep golden without pale raw dough in the thicker folds.
- Cool about 10 minutes on racks before serving. Record actual sheet width, strip count, cheese loss and center crispness after a kitchen trial.
Cut, twist, chill, bake
Fold over the filled half and press just enough for the two sides to hold. Cut approximately half-inch strips, twist gently, and pinch their ends on a lined sheet. Don't stretch the strips so hard that they become thin and bake unevenly.
Brush with a beaten egg and teaspoon of water, then chill for twenty minutes. Bake at 400°F until deeply golden and baked through the thick center. If the exterior colors faster than the fold, record pan position and strip width for a second trial.
Cool on a rack so escaping steam does not soften the underside. A ten-minute cooling estimate makes them warm rather than dangerously hot to handle.
If twists unravel or soften
Pinched ends and cold dough should help a twist keep its shape. A wide strip may puff into a breadstick rather than a narrow straw; note the actual count and width. Cheese escaping onto the sheet can brown faster than the pastry.
The snack is best assessed after a real bake: determine whether it stays crisp once cool before describing a make-ahead shelf life. Recrisping instructions are not yet tested.

How to serve
Offer on a savory appetizer board with room for the long twists rather than burying them under wet toppings. An airtight container may protect them after cooling, but quality over a specified number of days remains unverified.
Use a photograph of actual golden puff pastry, not a short crumbly biscuit. No exact US Pinterest Search growth metric is assigned to this editorial title.
Cheese-straw questions
Can I skip the chill?
The proposed 20-minute chill is part of this working method to keep the folds firm; test any shorter version separately.
Can I use pre-shredded cheese?
Coarse pieces may fall out of the fold; finely grated Parmesan is the measured base.
What if the center is pale?
Continue baking in small increments and record whether a narrower strip or different pan position is needed.
