Peanut Butter Blossom Cookies

  • Author: Maya Singh
  • Total Time: 150 minutes
  • Yield: 36 servings 1x

Description

Sugar-rolled peanut butter cookies baked until set, then pressed with a milk-chocolate kiss while warm.

Ingredients

Scale
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Creamy peanut butter
  • 1/2 cup Granulated sugar, for dough
  • 1/2 cup Light brown sugar, packed
  • 1 egg Large egg
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 3/4 teaspoon Baking soda
  • 1/4 teaspoon Fine salt
  • 1/4 cup Granulated sugar, separate rolling coating
  • 36 pieces Milk-chocolate kisses, unwrapped

Instructions

  1. Cream softened butter, peanut butter, 1/2 cup granulated sugar and 1/2 cup packed brown sugar until combined. Beat in egg and vanilla. Separately whisk flour, baking soda and salt, then mix dry ingredients into wet until no flour pockets remain. Do not taste raw dough.
  2. Cover and refrigerate dough about 30 minutes until scoopable. Heat oven to 350 F (175 C), line trays with parchment and unwrap 36 milk-chocolate kisses. Place separate 1/4 cup rolling sugar in a small bowl.
  3. Scoop approximately 1-tablespoon balls, roll in separate sugar and set roughly 2 inches apart, about 12 per tray. Bake one tray at a time an estimated 9–11 minutes until edges set and tops puff; do not wait for deep browning.
  4. Immediately press one unwrapped chocolate kiss gently into the center of each warm cookie. Let stand briefly on tray, then move carefully to a rack. Repeat for three trays, checking actual cookie count.
  5. Cool until cookies and chocolate are completely set, approximately 60 minutes as a working allowance; wait longer if kisses still smear. Box only fully set cookies.
