Ingredients

8 oz Pasta (Whole Grain or GF)
4 cups Fresh Broccoli Florets
2 tbsp Extra Virgin Olive Oil
4–5 Garlic Cloves, minced
1/4 cup Nutritional Yeast
1/2 cup Unsweetened Plant Milk
2 tbsp Lemon Juice
1/2 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Red Pepper Flakes (optional)
1/2 cup Reserved Pasta Water


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add chosen pasta and cook according to package directions until al dente. Reserve about 1/2 cup of starchy pasta water before draining
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1 minute. Add broccoli florets and sauté for 5-7 minutes until bright green and tender-crisp
  3. Combine nutritional yeast, plant milk, lemon juice, salt, and black pepper in a blender. Blend until smooth and creamy. Adjust seasonings as needed
  4. Drain cooked pasta and add to the skillet with broccoli. Pour creamy sauce over the pasta and broccoli, stirring gently to coat evenly
  5. If the sauce is too thick, gradually add reserved pasta water until reaching desired consistency
  6. Serve immediately, garnished with extra black pepper, red pepper flakes, or fresh herbs if desired

Notes

To make it creamier, add soaked raw cashews to the sauce ingredients in the blender.

Experiment with different vegetables or pasta shapes to keep the dish exciting.
