4 cloves Garlic, minced
1-inch piece Fresh ginger, grated
8 cups Chicken broth (low sodium preferred)
2 tablespoons Soy sauce
1 tablespoon Rice vinegar
1 teaspoon Sriracha or chili garlic sauce (optional)
1 teaspoon Brown sugar or honey
2 boneless, skinless Chicken breasts, cooked and shredded
4 (3-ounce) packages Ramen noodles (flavor packets discarded)
2 cups Baby spinach or bok choy, chopped
4 Hard-boiled eggs, halved (for serving)
1/4 cup Fresh cilantro, chopped (for serving)
2 Green onions, sliced (for serving)
Optional: Toasted sesame seeds, nori sheets, lime wedges


Instructions

  1. Prepare the Aromatics: Heat the sesame oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5-7 minutes
  2. Infuse with Flavor: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant
  3. Build the Broth: Pour in the chicken broth. Add the soy sauce, rice vinegar, Sriracha (if using), and brown sugar. Bring to a gentle simmer and let it simmer for at least 10-15 minutes
  4. Cook the Noodles: While the broth simmers, cook the ramen noodles according to package directions in a separate pot of boiling water. Drain them well
  5. Add Chicken and Greens: Stir the cooked, shredded chicken into the simmering broth. Add the baby spinach or bok choy and cook until just wilted, about 2-3 minutes
  6. Assemble and Serve: Divide the cooked ramen noodles among serving bowls. Ladle the hot soup over the noodles and garnish with halved hard-boiled eggs, cilantro, and green onions
