Roasted Beet and Orange Salad. Warm-roasted beets, fresh orange segments and peppery arugula in a light citrus-vinegar dressing. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A bright side for a winter table

Roasted beets and fresh orange segments make a colorful contrast over arugula. A small citrus-vinegar dressing ties them together without cheese or nuts in this measured version.

The recipe is a working six-side-portion plan. Beet sizes, peeled yield and orange juiciness all need a kitchen trial.

Roast beets until tender

Scrub and wrap whole beets on a rimmed tray so any juices are contained. A knife that slips into the largest beet with little resistance is more useful than assuming every beet finishes at fifty minutes.

Cool enough to handle before rubbing off skins and cutting wedges. Beet juice can stain; use a practical board and keep orange segments separate until assembly.

Ingredients for 6 side portions

Working measured recipe
IngredientAmountUse
Medium beets, scrubbed1 1/2 poundsTrim greens; roast whole.
Oranges2 medium orangesPeel and cut into segments.
Baby arugula3 cupsDry before assembling.
Extra-virgin olive oil2 tablespoonsDressing.
Fresh orange juice1 tablespoonDressing; separate from segmented fruit.
Apple cider vinegar1 tablespoonDressing.
Dijon mustard1 teaspoonDressing.
Fine salt1/4 teaspoonDressing.
Freshly ground black pepper1/8 teaspoonDressing.

Step-by-step method

  1. Heat oven to 400°F. Scrub approximately 1 1/2 lb medium beets, trim greens and wrap loosely in foil on a rimmed baking sheet. Roast about 45–50 minutes until a thin knife slides into the largest beet with little resistance; larger beets may need longer.
  2. Cool until comfortable to handle, approximately twenty minutes, then rub off skins and cut the beets into bite-size wedges. Peel and segment two oranges, removing thick white pith. Dry 3 cups baby arugula.
  3. Whisk 2 tbsp olive oil, 1 tbsp orange juice, 1 tbsp cider vinegar, 1 tsp Dijon, 1/4 tsp salt and 1/8 tsp pepper in a large bowl. Toss the beet wedges with a little dressing first, then arrange with oranges and arugula.
  4. Add the remaining dressing just before serving in six side portions. Record peeled-beet yield, citrus juiciness and arugula wilting in a kitchen trial; the salad has no cheese or nuts in its measured card.

Segment the oranges

Peel off thick white pith and separate the two oranges into tidy pieces. The measured tablespoon orange juice in the dressing is additional to those segments.

Arugula should be dry. Wet leaves dilute the dressing and wilt faster once they meet warm beets. Cool the wedges slightly if a crisper salad is desired.

Dress just before serving

Whisk olive oil, juice, cider vinegar, Dijon, salt and pepper. Toss beets lightly first to avoid coating every green leaf ruby red, then arrange the citrus and arugula on the platter.

The Mediterranean Dish has a related beet salad reference; this version has its own simple vinaigrette and no feta or other cheese. Six portions should be checked against actual trimmed produce weight.

Make-ahead notes

The beets can be roasted separately before the final toss, but exact holding quality and dressed-salad life have not been tested. Assemble close to serving for the proposed contrasting textures.

Do not claim a nut-free or allergen-free guarantee solely because no nuts appear in the card; packaged mustard and preparation environment still need review.

Beet salad questions

Are the beets raw?

No. Roast them until tender, then cool, peel and wedge before assembly.

Is cheese included?

No. The measured salad is beet, orange and arugula with a citrus dressing.

When is it dressed?

Just before serving so the greens do not sit in vinaigrette.
