Ingredients
3–4 lbs Bone-in or Boneless Turkey Breast
1/2 cup Unsalted Butter
2 tablespoons Fresh Rosemary, minced
2 tablespoons Fresh Thyme, minced
1 tablespoon Fresh Sage, minced
4 cloves Garlic, minced
1 large Orange, zested and sliced
1 large Lemon, zested and sliced
Kosher Salt & Black Pepper, to taste
2 tablespoons Olive Oil
Instructions
- Preheat your oven to 325°F (165°C)
- Pat the turkey breast completely dry with paper towels
- In a small bowl, mix softened butter, minced garlic, rosemary, thyme, sage, orange zest, lemon zest, salt, and pepper until combined
- Gently lift the skin of the turkey breast and stuff half of the herb butter mixture under the ski
- Rub the remaining butter mixture all over the outside of the turkey skin and drizzle with olive oil
- Place orange and lemon slices at the bottom of the roasting pan and set the turkey breast on top
- Roast in the oven for 1.5 to 2 hours, until the internal temperature reaches 165°F (74°C)
- Let the turkey rest for at least 15 minutes before carving
Notes
For a boneless breast, be very careful with cooking time; it will cook faster.
Use a digital meat thermometer for best results.
