Roasted Grape Ricotta Crostini

  • Author: Ethan Carter
  • Total Time: 50 minutes
  • Yield: 12 servings 1x

Description

Twelve baguette toasts with lemon ricotta and warm balsamic-roasted red grapes.

Ingredients

Scale
  • 2 cups Seedless red grapes, stemmed
  • 2 tablespoons Extra-virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Fresh rosemary, finely chopped
  • 1/4 teaspoon Fine salt
  • 1/8 teaspoon Black pepper
  • 12 slices Baguette, sliced about 1/2 inch thick
  • 1 cup Whole-milk ricotta, drained if watery
  • 1 teaspoon Finely grated lemon zest
  • 1 teaspoon Fresh lemon juice

Instructions

  1. Heat oven to 400°F. Dry 2 cups stemmed red grapes and toss on a parchment-lined rimmed sheet with 1 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp chopped rosemary, 1/8 tsp fine salt and 1/8 tsp pepper. Roast approximately 20–25 minutes, until some skins wrinkle and a few split but grapes remain recognizable.
  2. While grapes roast, brush 12 half-inch baguette slices with the remaining 1 tbsp olive oil and arrange on a second sheet. Toast in the same 400°F oven for about 8–10 minutes, turning once if necessary, until crisp and lightly golden. Watch both sheets and rotate if the oven browns unevenly.
  3. Stir 1 cup drained whole-milk ricotta with 1 tsp lemon zest, 1 tsp lemon juice and the remaining 1/8 tsp fine salt until smooth. Let the grapes cool roughly 5 minutes so they are warm rather than scalding hot.
  4. Spread about 1 heaping tbsp lemon ricotta on each toast, then distribute the roasted grapes and their restrained pan juices over 12 pieces. Serve promptly for a crisp base. Measure leftover grapes or ricotta in the kitchen test and revise the assembly if necessary.
