Caramel flavor without a sugar thermometer

Salted caramel fudge in this draft is a soft-set white-chocolate confection, not a boiled sugar-stage fudge. Soft caramel candies supply the caramel note, condensed milk and white chocolate form the body, and two measured salts balance the sweetness. An eight-inch pan makes small edible-gift squares.

The mixture has not been made in a kitchen trial. Its cut quality, sweetness and exact thirty-six-piece yield depend on the chocolate and caramel brands. A four-hour chill is included, so this is not a ten-minute start-to-finish sweet.

Choose the right canned milk and candy

Use a fourteen-ounce can of sweetened condensed milk, not the similarly shelved evaporated milk. The latter is much less sweet and will not perform as the same binder. Eighteen ounces of real white chocolate are chopped small to help a gentle melt.

Choose soft caramels that can be cut, unwrap them all and weigh eight ounces before heating. Hard candies may dissolve at a different pace or produce a different texture. Fine salt is mixed into the base; flaky sea salt stays on the top where it can be seen and tasted.

This version has no walnuts and is not maple fudge. The prior calendar draft E3-19 serves that different nut-and-maple intent. Inspect ingredient labels for milk, soy and cross-contact before promising any dietary suitability.

Step-by-step method

  1. Line an 8-inch square pan with parchment overhang. Chop 18 oz white chocolate and 8 oz soft caramel candies so they melt evenly. Measure 1/4 tsp fine salt and reserve 1/2 tsp flaky salt for the surface.
  2. In a heavy saucepan over low heat, stir the white chocolate, caramels and one 14-oz can sweetened condensed milk constantly until just smooth, approximately 8–10 minutes. Remove from heat; stir in the fine salt. Avoid boiling or scorching the chocolate.
  3. Spread the warm mixture in the prepared pan and scatter flaky salt across the surface, pressing lightly. Cool briefly, then refrigerate at least four hours until firm enough to slice; the four-hour clock is included in the total.
  4. Lift by parchment and cut a 6-by-6 grid for 36 small pieces with a clean knife. Record actual firmness, caramel distribution and the size of each portion in a kitchen trial.

Low heat protects the texture

Line the pan with overhanging parchment first because the mixture thickens as it cools. Combine the chopped white chocolate, chopped soft caramels and condensed milk in a heavy saucepan. Stir continuously over low heat until smooth, roughly eight to ten minutes.

Remove from the heat as soon as no large candy pieces remain. Prolonged boiling can make white chocolate grainy or scorch the milk. Stir in the fine salt, level the mixture into the pan, then add flaky salt before a skin forms.

Cool briefly before refrigeration and wait at least four hours before lifting the slab. A warm knife wiped between cuts may give tidy squares; the actual clean-cut temperature and shape should be recorded rather than guaranteed.

If the batch is grainy or too soft

Graininess can indicate too much heat or poorly melted chocolate. Do not fix it by adding random liquid after the mixture is cooked; note pan type and heat setting in the trial. Uneven caramel pockets point to candy chunks that were too large.

A soft slab may need more chill, but persistent softness could indicate a brand or ratio issue. Measure the whole batch and record a test cut rather than inventing a storage-life claim. Oversalting cannot be undone, so measure both the mixed-in and finishing salt before starting.

The Tasting Table reference demonstrates a related flavor pairing, not proof that this independently proposed quantity of each ingredient sets in exactly four hours.

Gift-box planning

Cut a six-by-six grid for small squares and keep them chilled while assessing their handling. For gifting, test wrapping, temperature and quality before specifying how long they can remain unrefrigerated; no shelf-stable claim is supported.

Photograph the real test batch once its color and cut face are confirmed. A Pinterest graphic showing a dark-chocolate swirl or a walnut-studded slab would misrepresent this five-ingredient measured proposal. No verified exact-keyword Pinterest growth is attached.

Fudge questions

Can evaporated milk replace condensed milk?

No; the sugar and solids differ substantially, so this measured formula would need redevelopment.

Can I use hard caramels?

The current draft specifies soft candies. A harder candy could melt and set differently and requires a trial.

When should I add flaky salt?

Scatter it over the warm, leveled slab before chilling so the finishing crystals adhere.
