Description

Ingredients

2 tablespoons Olive oil
1 pound Italian sausage, casing removed
1 large Yellow onion, diced
3 medium Carrots, diced
3 medium Celery stalks, diced
4 cloves Garlic, minced
1 cup Dried green or brown lentils, rinsed
1 (14.5 ounce) can Diced tomatoes, undrained
6 cups Chicken or vegetable broth
1 large piece Parmesan rind (about 3x2 inches)
5 ounces Fresh spinach, roughly chopped
Salt to taste
Black pepper to taste
1/4 cup Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (for serving)


Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Drain excess grease, leaving about a tablespoon in the pot
  2. Reduce heat to medium and add the diced onion, carrots, and celery. Sauté until vegetables soften and become fragrant, about 8-10 minutes
  3. Stir in minced garlic and cook for another minute. Add rinsed lentils to the pot and stir to coat with the drippings and vegetables
  4. Pour in diced tomatoes and broth. Stir well and add the reserved browned sausage
  5. Add the parmesan rind and bring to a boil. Then reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender
  6. Remove parmesan rind. Stir in fresh spinach and cook until wilted, about 2-3 minutes
  7. Season with salt and pepper to taste. Serve garnished with fresh parsley and grated Parmesan cheese
