Sheet Pan Chicken Pitas with Herby Slaw is a quick, flavorful weeknight meal that brings together perfectly seasoned chicken, crisp-tender veggies, and a vibrant herby slaw—all in under 40 minutes.
Ingredients
1.5 lbs Boneless, skinless chicken breasts (or thighs)
1 large Red onion, cut into wedges
2 large Bell peppers, chopped into 1-inch pieces
1 medium Zucchini, half-moons
3 tbsp Olive oil
1 tsp Smoked paprika
1 tsp Garlic powder
1 tsp Dried oregano
1/2 tsp Salt
1/4 tsp Black pepper
4 cups Green cabbage, thinly shredded
2 medium Carrots, shredded
1/4 cup Fresh parsley, chopped
2 tbsp Fresh mint, chopped (optional)
1 tbsp Fresh dill, chopped (optional)
1/2 cup Mayonnaise (light or regular)
2 tbsp Apple cider vinegar
1 tsp Dijon mustard
1 tsp Honey or maple syrup
Salt and black pepper to taste
6–8 pieces Whole wheat pita bread
Hummus (optional)
Feta cheese, crumbled (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper
- In a large bowl, combine the chicken, red onion, bell peppers, and zucchini. Drizzle with olive oil and season with smoked paprika, garlic powder, dried oregano, salt, and black pepper. Toss to coat
- Spread the mixture on the baking sheet in a single layer and roast for 20-25 minutes, flipping halfway through, until the chicken is cooked and the vegetables are tender
- While chicken and veggies roast, make the herby slaw by combining green cabbage, carrots, parsley, mint, and dill in a medium bowl. Mix dressing ingredients in a separate bowl, then toss with the veggie mixture
- Warm pita bread in the microwave or oven just before serving
- Assemble pitas with the roasted chicken and veggies, top with herby slaw, and sprinkle with feta if desired
- Serve immediately

Use two baking sheets if necessary to avoid overcrowding.
