Description

28 oz Frozen Waffle or Crinkle-Cut Fries
1.5 lbs Boneless Skinless Chicken Breast or Thighs
3 tbsp Olive Oil
2 tbsp Fresh Lemon Juice
4 cloves Minced Garlic
2 tsp Dried Oregano
Salt and Black Pepper to taste
1/2 cup Crumbled Feta Cheese
1 cup Diced English Cucumber
1 cup Cherry Tomatoes, halved
1/4 cup Thinly Sliced Red Onio
1/2 cup Tzatziki Sauce
2 tbsp Fresh Parsley or Dill


Instructions

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or foil
  2. Cut the chicken into bite-sized 1-inch pieces. In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Toss the chicken in this mixture and let it marinate for at least 15 minutes
  3. Spread the frozen fries on the prepared baking sheet in a single layer and bake for 10–12 minutes
  4. Remove the tray from the oven, scatter the marinated chicken pieces over the fries, and return to the oven to bake for another 15–20 minutes until the chicken is golden brown and cooked through
  5. Once out of the oven, sprinkle crumbled feta over the hot chicken, then layer on cucumbers, tomatoes, and red onions
  6. Drizzle tzatziki sauce over the entire tray and garnish with fresh herbs. Serve immediately

Notes

Store leftovers in an airtight container separately from fresh toppings and reheat in an air fryer or oven for best texture.
