Description

This Sheet Pan Shrimp Scampi and Asparagus is an easy-to-make dish that delivers delicious buttery, garlicky flavors with minimal cleanup. Perfect for busy weeknights, it combines shrimp and asparagus on a single tray for simple cooking and even better taste.


Ingredients

1 lb Large Shrimp (peeled and deveined)
1 bunch Asparagus (trimmed)
4 tbsp Unsalted Butter (melted)
2 tbsp Olive Oil
4–5 cloves Garlic (minced)
1 large Fresh Lemon (juiced and zested)
1/2 tsp Red Pepper Flakes (optional)
1/4 cup Parmesan Cheese (grated)
2 tbsp Fresh Parsley (chopped)


Instructions

  1. Preheat your oven to 400°F (200°C). Trim the asparagus and lay it on one side of a large rimmed baking sheet
  2. Pat the shrimp dry and place on the other side of the baking sheet. In a bowl, whisk together melted butter, olive oil, minced garlic, lemon zest, lemon juice, and red pepper flakes. Pour over the shrimp and asparagus
  3. Toss everything until coated, spread into a single layer, and roast for 8-10 minutes until shrimp are opaque and in a 'C' shape. Remove from oven and sprinkle with Parmesan cheese and fresh parsley

Notes

For dairy-free, substitute butter with vegan butter or extra olive oil.

If using thicker asparagus, cook for 5 minutes before adding shrimp.
