This Shrimp Scampi with Zucchini Noodles is a healthy, quick-to-make dish that packs classic flavors of garlic, butter, and lemon, combining tender shrimp with zesty zucchini noodles in a stunning 20-minute meal.
Ingredients
1 lb Large Shrimp (peeled, deveined, tails on or off)
3–4 medium Zucchini
3 tablespoons Unsalted Butter
1 tablespoon Olive Oil
4–6 cloves Garlic (minced)
1/4 cup Dry White Wine
2 tablespoons Lemon Juice (freshly squeezed)
1/4 teaspoon Red Pepper Flakes (optional)
1/4 cup Fresh Parsley (chopped)
Salt and Black Pepper (to taste)
Instructions
- Prep Your Zucchini Noodles: Spiralize or slice zucchini into thin noodles and set aside
- Prep Your Shrimp: Pat shrimp dry and season with salt and black pepper
- Heat the Pan: Heat a large skillet over medium-high heat with olive oil and 1 tablespoon of butter until melted
- Sauté the Shrimp: Cook shrimp for 1-2 minutes per side until pink and opaque. Remove and set aside
- Build the Scampi Sauce: Add remaining butter, minced garlic, and red pepper flakes to the pan. Sauté for 30-60 seconds
- Deglaze with Wine: Pour in white wine and scrape the pan to release browned bits. Simmer for 1-2 minutes
- Add Lemon Juice: Stir in fresh lemon juice
- Combine with Zucchini Noodles: Toss zucchini noodles in the sauce for 1-2 minutes until slightly softened
- Return Shrimp & Garnish: Add shrimp back to the pan, toss to coat, and stir in fresh parsley
- Serve Immediately!
Notes
