Ingredients
2 tablespoons Olive Oil
1.5 lbs Beef Chuck, cut into 1-inch cubes
1 large Yellow Onion, chopped
2 cloves Garlic, minced
2 Carrots, peeled and diced
2 Celery stalks, diced
8 ounces Cremini Mushrooms, quartered
1/4 cup All-Purpose Flour
2 cups Beef Broth
1 cup Frozen Peas
1 cup Frozen Cor
1 tablespoon Fresh Thyme, chopped (or 1 teaspoon dried)
1 tablespoon Fresh Rosemary, chopped (or 1 teaspoon dried)
1 teaspoon Worcestershire Sauce
Salt and freshly ground black pepper to taste
2 cups All-Purpose Flour for Biscuits
1 tablespoon Baking Powder
1 teaspoon Sugar
1/2 teaspoon Salt
1/2 cup (1 stick) Cold Unsalted Butter, cut into small cubes
3/4 cup Buttermilk, cold
1 tablespoon Melted Butter (for brushing)
Instructions
- Pat the beef chuck cubes dry with paper towels and season with salt and pepper
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Brown the beef in batches, then set aside
- Add the chopped onion, carrots, and celery to the skillet and cook until softened. Stir in minced garlic and mushrooms
- Sprinkle flour over the vegetables and cook for 1-2 minutes
- Whisk in beef broth, thyme, rosemary, and Worcestershire sauce. Bring to a simmer
- Return the beef to the skillet, cover, and simmer for 30-40 minutes or until tender
- Stir in frozen peas and corn in the last 5-10 minutes of simmering
- Preheat oven to 400°F (200°C). In a bowl, whisk together flour, baking powder, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add buttermilk and mix until just combined
- Turn the dough onto a floured surface and cut out biscuits
- Arrange biscuits on top of the beef filling, brush with melted butter, and bake for 20-25 minutes
- Let rest for 5-10 minutes before serving
