  • Author: Sophie Hart
  • Total Time: 510 minutes
  • Yield: 8 servings 1x

Description

Dried green split peas, potato and vegetables cooked until soft in a slow cooker with smoked paprika and thyme, finished with lemon.

Ingredients

Scale
  • 1 pound Dried green split peas, sorted and rinsed
  • 1 large onion Yellow onion, diced
  • 2 medium carrots Carrots, diced
  • 2 stalks Celery stalks, diced
  • 1 medium potato Yukon Gold potato, cut in ½-inch cubes
  • 3 cloves Garlic cloves, minced
  • 7 cups Low-sodium vegetable broth
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Dried thyme
  • 2 leaves Bay leaves
  • 1/2 teaspoon Fine salt
  • 1 tablespoon Fresh lemon juice

Instructions

  1. Sort 1 lb dried green split peas, discard debris and rinse well. Dice one onion, two carrots, two celery stalks and one medium Yukon Gold potato into approximately ½-inch pieces; mince three garlic cloves.
  2. Put peas and vegetables into a 6-quart slow cooker. Add 7 cups low-sodium vegetable broth, 1 tsp smoked paprika, ½ tsp dried thyme, two bay leaves and ½ tsp fine salt. Stir, cover and cook on low about 8 hours until peas collapse and potato is tender. Do not use frozen ingredients.
  3. Remove both bay leaves. Stir firmly to break down some peas and potatoes; if excessively thick, add hot broth or water in measured small amounts and record the final volume. Stir in 1 tbsp fresh lemon juice after cooking, taste and adjust seasoning. Allow approximately 10 minutes for finishing.
  4. Serve hot in eight working bowls. Measure actual finished volume and note whether pea age, cooker size or broth brand required a longer cook or different seasoning.
