Slow Cooker Vegetarian Chili

Slow Cooker Vegetarian Chili. A slow-cooker chili built from three canned beans, browned mushrooms, peppers and tomatoes, without sweet potato or turkey. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A different route from Chefly's other chilies

This slow cooker vegetarian chili uses three cooked canned beans and finely chopped browned mushrooms for body. It has no sweet potato and no ground turkey. Chefly already has a stovetop sweet-potato-and-black-bean chili and a turkey slow-cooker chili; both should stay linked as alternatives, not treated as the same recipe.

The turkey post has a casual vegetarian-substitution suggestion. A standalone recipe can be useful only if it has an independent measured method and clear intent. The mushroom browning, three-bean mix and final texture here are proposed, not kitchen-tested or cleared for a second URL.

Brown mushrooms before slow cooking

Finely chopped cremini mushrooms release water in the skillet. Cooking off that moisture before the slow-cooker stage helps avoid a watery chili and gives a savory base. Add onion and pepper to the same pan, then garlic and spices briefly.

The three cans are already cooked black, kidney and pinto beans. Do not substitute dry kidney beans into this low-temperature, acidic slow-cooker method; dry legumes require separate safe preparation. The broth is vegetable, not chicken broth from the existing turkey recipe.

Step-by-step method

  1. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Cook 12 oz finely chopped cremini mushrooms, one chopped onion and one diced red bell pepper until mushroom liquid evaporates and edges begin to brown, approximately 8–10 minutes. Add three minced garlic cloves, 2 tbsp chili powder, 2 tsp cumin and 1 tsp smoked paprika; stir for about one minute.
  2. Transfer the skillet mixture to a 5- to 6-quart slow cooker. Add one drained and rinsed 15-oz can each of black, kidney and pinto beans, one 28-oz can diced tomatoes with juices, 3 tbsp tomato paste, 1 cup low-sodium vegetable broth and 3/4 tsp fine salt. Stir, cover and start cooking promptly.
  3. Cook on LOW approximately five hours until the peppers are tender and the chili bubbles throughout. Stir thoroughly. If too thin, mash a measured cup of beans against the side and allow to thicken briefly; note any changed time in the test record.
  4. Turn off the cooker and stir in 1 tbsp lime juice. Divide into eight working bowls of roughly one cup, measuring actual total yield after a trial. Move leftovers promptly to shallow containers for refrigeration according to the linked FDA guidance.

Build a thick tomato base

The full 28-ounce can of diced tomatoes goes in with its juices, alongside three tablespoons tomato paste and only one cup broth. That lower liquid level is intentional because a covered cooker retains moisture. Stir everything before starting.

Kitchen Confidante also uses mushroom and canned beans in slow-cooker vegetarian chili. This independently measured version omits soy sauce and celery, uses the specified three-bean combination and finishes with a tablespoon of lime.

Check tenderness and thickness

Five hours on LOW is a planning estimate, not a clock guarantee. The peppers should be tender and the chili hot throughout. If liquid remains thin, mash some beans rather than adding an unmeasured bag of flour or starch.

Mushroom size, cooker shape and tomato brands alter texture. In the first kitchen test, measure the final cooked volume and how long it takes the peppers to soften before committing to eight one-cup bowls.

Serve and cool leftovers promptly

Ladle into bowls without automatically adding cheese or sour cream to a dish intended to stay vegetarian. Such toppings would change allergens and the image; offer them separately if desired and clearly labelled.

Cool cooked chili promptly in shallow containers and refrigerate under current FDA guidance. The existing sweet-potato/black-bean URL is better for someone seeking that named vegetable rather than another near-identical page.

Three-bean chili questions

Can I use dry beans?

No direct swap is included. This formula calls for drained, cooked canned beans, including kidney beans.

Why use mushrooms?

They provide a browned savory base and a separate texture from sweet-potato chunks or ground turkey.

Is it the same as Chefly’s turkey chili without meat?

No. The mushroom skillet, three-bean ratio and tomato-broth balance are independently specified; final keyword-overlap review remains.
