Soft Ginger Caramels

Soft Ginger Caramels. Small soft dairy caramels made with ginger-infused cream and cooked to a measured candy-thermometer endpoint. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A ginger note in a soft caramel

Fresh ginger infuses warm cream, then is strained out before the dairy joins sugar, syrup and butter. The goal is a soft, cuttable caramel with spice in the background, not ginger pieces throughout or a brittle sheet that snaps.

This is an untested candy formula. Altitude, thermometer calibration, ginger strength and actual cream lost to straining change the result. The proposed three-hour set is included in the four-hour-five-minute total.

Prepare the pan first

Line and butter the pan before any sugar is heated. Candy near the endpoint moves quickly, and trying to fit parchment afterward is impractical. Use a deep heavy saucepan with room for vigorous bubbling.

Two tablespoons sliced fresh ginger are steeped in one cup cream for twenty minutes. The source recipe at I Am Baker also infuses cream, but cooks its sugar to a separate high endpoint before adding cream. This draft uses a simpler one-pot caramel and needs its own trial.

Working measured recipe
IngredientAmountUse
Heavy cream1 cupWarm with ginger and strain.
Fresh ginger, peeled and thinly sliced2 tablespoonsInfusion; remove before candy cooking.
Granulated sugar1 cupCaramel base.
Light corn syrup1/2 cupCaramel base.
Unsalted butter1/4 cupCut into pieces.
Fine salt1/4 teaspoonCaramel base.

Step-by-step method

  1. Line an 8-inch square pan with parchment and lightly butter the lining. Warm 1 cup heavy cream with 2 tbsp thinly sliced peeled ginger just until steaming; cover and steep 20 minutes. Strain out ginger and return the infused cream to a heatproof measure. Record actual cream loss; do not add raw ginger slices to finished candy.
  2. In a heavy 3-quart saucepan combine 1 cup granulated sugar, 1/2 cup light corn syrup, 1/4 cup unsalted butter, 1/4 tsp fine salt and the strained ginger cream. Heat over medium, stirring gently until sugar dissolves, then monitor closely with a candy thermometer held off the pot bottom.
  3. Cook and stir carefully until the bubbling caramel reaches approximately 245°F for a soft cuttable set at the testing altitude. Remove from heat and pour immediately into the lined pan without scraping any scorched residue. Keep hands and children away from molten sugar.
  4. Let stand undisturbed approximately 3 hours until completely cool and firm enough to cut. Lift by parchment, cut into about thirty-six small squares and wrap individually in food-safe parchment if they hold shape. Record temperature, altitude, exact texture and yield in a kitchen trial.

Cook to texture, not a timer

Stir initially to dissolve sugar, then monitor the candy thermometer without resting its bulb on metal. The proposed 245°F endpoint is a starting target for soft caramels, not a guarantee at every altitude. Avoid tasting molten caramel.

If the mixture begins to scorch or separate, do not scrape browned residue into the pan of finished candy. Document heat level and pot dimensions. A twenty-five-minute cook estimate should be updated from the actual endpoint.

Cool before cutting

Pour carefully and let the 8-inch slab set undisturbed. Cutting while warm makes pieces stretch and stick. Once fully cool, use a lightly oiled or buttered knife if necessary and test whether one-inch squares hold shape in parchment.

If too firm, the measured final temperature may have been too high for the local boiling point. If too soft, the syrup may have stopped early or the dairy balance differed. Log those variables rather than declaring a shelf-stable gift.

Gift handling

Wrap pieces individually only after the test confirms a cuttable set. The recipe contains milk; label it. Storage time and ambient handling need the actual batch and packaging assessment before publication.

These are soft cream caramels, unlike the plain peanut brittle in the previous day's slot. The two candies should not share image prompts or a recipe-card temperature.

Caramel questions

Is the ginger left in the candy?

No. Strain the infused cream before candy cooking.

Can I stop when it turns amber?

Use a reliable thermometer; color is not a reliable soft-caramel endpoint.

When can I wrap the pieces?

After a complete cool and a cut test show the squares hold their shape.
