2 medium Carrots
2 medium Celery Stalks
4 cloves Garlic
6–8 cups Chicken Broth
1 (14.5 oz) can Diced Tomatoes
½ – 1 teaspoon Red Pepper Flakes
1 teaspoon Dried Oregano
6–8 cups Fresh Kale
½ cup Small Pasta (Ditalini, Orzo)
Salt to taste
Black Pepper to taste
Parmesan Cheese for serving


Instructions

  1. Prep Your Ingredients: Ensure all your vegetables are chopped and your sausage is sliced or crumbled
  2. Brown the Sausage: Heat the olive oil in a large Dutch oven and cook the sausage until browned
  3. Sauté the Aromatics: Add chopped onion, carrots, and celery. Sauté for 5-7 minutes
  4. Add Garlic and Spices: Stir in minced garlic, red pepper flakes, and oregano. Cook for another minute
  5. Build the Broth: Pour in chicken broth and add diced tomatoes. Bring to a simmer
  6. Cook the Pasta: Add small pasta and cook according to package directions
  7. Incorporate Kale and Sausage: Stir in chopped kale and browned sausage. Simmer until kale is wilted
