Description

This Spicy Masala Indian Omelette is a high-protein breakfast or quick dinner, featuring bold spices and fresh herbs that transform simple eggs into a gourmet experience in under ten minutes.


Ingredients

3 Large Eggs
1/4 cup Red Onio
1/2 small Tomato
1–2 Green Chilies
2 tbsp Fresh Cilantro
1/4 tsp Turmeric Powder
1/2 tsp Red Chili Powder
1/4 tsp Garam Masala
Salt to taste
1 tbsp Butter or Oil


Instructions

  1. Finely chop your onion, tomato, green chilies, and cilantro
  2. Crack three large eggs into a medium mixing bowl. Add the salt, turmeric, red chili powder, and garam masala. Whisk vigorously until fully incorporated
  3. Fold the chopped vegetables and cilantro into the egg mixture. Stir well to ensure the spices aren't clumping
  4. Heat a non-stick skillet over medium heat. Add your butter, oil, or ghee
  5. Once the fat is shimmering, pour the egg mixture into the center of the pan. Tilt the pan slightly to spread the eggs to the edges
  6. Let it cook undisturbed for about 2-3 minutes. Use a spatula to gently lift the edges. When the bottom is golden and the top is mostly set, carefully flip the omelette
  7. Cook the other side for another 1-2 minutes
  8. Slide your finished omelette onto a plate and serve immediately

Notes

Use fresh cilantro for brightness.

Adjust spice levels by varying the amount of green chilies.

Serve with bread or a side salad for a complete meal.
