Description

Sticky garlic chicken ramen stir fry with broccoli and peppers is a quick and comforting meal that combines tender chicken, vibrant vegetables, and ramen noodles in a sticky, savory sauce.


Ingredients

1.5 lbs Boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 tbsp Cornstarch
Salt & black pepper to taste
2 tbsp Olive oil or preferred cooking oil
1/2 cup Low-sodium soy sauce or tamari for gluten-free
1/4 cup Honey or maple syrup
2 tbsp Rice vinegar
1 tbsp Sesame oil
4–6 cloves Fresh garlic, minced
1 tbsp Fresh ginger, grated
1–2 tsp Sriracha or chili garlic sauce, to taste
1 tbsp cornstarch + 2 tbsp water for thickening the sauce
3–4 packs (3 oz each) Ramen noodle packets, discard seasoning
3 cups Broccoli florets, fresh or froze
2 medium Bell peppers, sliced into strips
1/2 medium Onion, sliced thinly
Toasted sesame seeds for garnish
Chopped green onions for garnish


Instructions

  1. Prepare your ingredients by cutting the chicken and vegetables, and whisk together all sauce ingredients
  2. Cook the chicken in a skillet or wok until golden brown and cooked through
  3. Stir-fry the vegetables until tender-crisp
  4. Cook the ramen noodles according to package directions, then drai
  5. Combine chicken and vegetables, add sauce and thicken with cornstarch slurry
  6. Add the ramen noodles, toss together, and serve garnished with sesame seeds and green onions

Notes

You can substitute chicken with shrimp, beef, pork, or tofu for a different protein.

Feel free to add other vegetables like carrots, snap peas, or mushrooms for variety.
