Description

A comforting and impressive stuffed pasta bake featuring beef or chicken sausage, gooey mozzarella, and crunchy garlic crumbs.


Ingredients

1 box Jumbo pasta shells or manicotti (about 12–14 oz)
1 lb Ground beef sausage or chicken sausage
1 medium Yellow onio
4–5 cloves Garlic
1 (28 oz) can Crushed tomatoes
2 tbsp Tomato paste
15 oz container Ricotta cheese
2 cups Mozzarella cheese (shredded, plus extra for topping)
½ cup Parmesan cheese (grated)
¼ cup Fresh parsley (chopped)
1 tsp Dried oregano
Salt and black pepper (to taste)
½ cup Panko breadcrumbs
2 tbsp Butter (melted)
1 tsp Garlic powder
1 tbsp Olive oil


Instructions

  1. Bring a large pot of salted water to a boil and cook the jumbo pasta shells or manicotti according to package directions until al dente. Drain and rinse with cold water
  2. In a large skillet, heat olive oil over medium-high heat. Add ground sausage and cook until browned. Drain excess grease
  3. Add chopped onion to the skillet and cook until translucent, then add minced garlic and cook for one additional minute
  4. Stir in tomato paste, crushed tomatoes, oregano, salt, and pepper. Simmer for at least 15 minutes
  5. In a medium bowl, combine ricotta, 1 cup mozzarella, Parmesan, and parsley. Season with salt and pepper
  6. Preheat oven to 375°F (190°C). Spread 1 cup sauce in the bottom of a baking dish
  7. Stuff cooked pasta with cheese mixture and place in the dish. Top with remaining sauce and mozzarella
  8. Mix panko, melted butter, and garlic powder, then sprinkle over the pasta bake
  9. Cover with foil and bake for 20 minutes. Remove foil and bake for another 15-20 minutes until bubbly
  10. Let rest for 10-15 minutes before serving

Notes

Cook pasta al dente to prevent mushiness in the oven.

Using a pastry bag makes stuffing easier and less messy.
