Instructions

  1. Prep the Vegetables: Start by peeling and dicing your sweet potatoes into small, uniform cubes. Chop your onions and bell peppers. Set them aside
  2. Brown the Beef: Heat a large, heavy-bottomed skillet over medium-high heat. Add the ground beef. Cook the beef until it is no longer pink, breaking it into small crumbles. Drain any excess fat if necessary
  3. Sauté the Aromatics: Add the diced onions and bell peppers directly to the skillet with the beef. Sauté for about 3 minutes until the onions soften. Add the minced garlic and cook for another 60 seconds until fragrant
  4. Add Spices: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Ensure the spices coat the beef and vegetables thoroughly
  5. Cook the Sweet Potatoes: Push the beef mixture to one side of the pan. Add a drizzle of olive oil to the empty space and toss in the sweet potato cubes. Sauté them for 2 minutes. Then, mix everything together
  6. Steam to Tenderness: Pour in the beef broth or water. Cover the skillet with a tight-fitting lid and reduce the heat to medium-low. Let it simmer for 8 to 10 minutes. Check the potatoes for tenderness
  7. The Final Sear: Remove the lid and turn the heat back up to medium-high for 2 minutes to allow any remaining liquid to evaporate
