Description
A 9-inch pan of boiled-and-mashed sweet potatoes with maple and cinnamon, baked under flour-brown-sugar-pecan crumbs.
Ingredients
Scale
- 3 pounds Sweet potatoes, peeled and cut in 1-inch pieces
- 1/4 cup Unsalted butter, melted, for filling
- 1/4 cup Pure maple syrup
- 1/3 cup Whole milk
- 1/2 teaspoon Ground cinnamon
- 1/2 teaspoon Fine salt for filling
- 1/3 cup All-purpose flour for streusel
- 1/3 cup Packed light brown sugar for streusel
- 3/4 cup Pecans, roughly chopped
- 3 tablespoons Unsalted butter, cold and cubed, for streusel
- 1/8 teaspoon Fine salt for streusel
Instructions
- Heat oven to 350°F. Put 3 lb peeled, 1-inch sweet-potato chunks in a large pot, cover with water and boil until easily pierced, approximately 20 to 25 minutes. Drain thoroughly and let steam dry briefly. Use an ungreased 9-inch square baking dish for the first trial; revisit sticking afterward.
- Mash potatoes. Stir in ¼ cup melted unsalted butter, ¼ cup pure maple syrup, ⅓ cup whole milk, ½ tsp cinnamon and ½ tsp fine salt. Spread evenly in the baking dish. The filling contains no egg or marshmallows.
- Rub ⅓ cup all-purpose flour, ⅓ cup packed light brown sugar, ¾ cup chopped pecans, 3 tbsp cold cubed unsalted butter and ⅛ tsp fine salt together until uneven crumbs form. Scatter over the potatoes without compacting.
- Bake approximately 30 minutes at 350°F until filling is hot throughout and topping lightly browned, then rest about 10 minutes before dividing into nine working portions. Check pan depth, topping color and moisture in an actual trial.
