Description
Taco Stuffed Sweet Potato Skins combine the sweetness of roasted sweet potatoes with a savory taco filling, making them a delightful and nutritious snack perfect for gatherings.
Ingredients
4–5 large Medium Sweet Potatoes
1 lb Ground Beef or Turkey
2 tablespoons Olive Oil
2 tablespoons Taco Seasoning
1.5 cups Shredded Cheddar Cheese
1 can (15 oz) Black Beans
1/2 cup Red Onio
1/4 cup Fresh Cilantro
Sour Cream or Greek Yogurt for serving
2 whole Limes
Instructions
- Preheat your oven to 400°F (200°C). Scrub your sweet potatoes and pat them dry
- Pierce each potato with a fork and place them on a baking sheet. Roast for 45 to 55 minutes until tender
- While potatoes cool, brown the ground meat in a skillet, add taco seasoning, and stir in black beans and diced onions. Simmer for five minutes
- Slice each sweet potato in half and scoop out some flesh, leaving a border. Brush skins with olive oil and sprinkle with salt
- Roast skins for 5-7 minutes cut side down, then flip and roast for another 5 minutes
- Fill skins with meat mixture, top with cheese, and bake until cheese is bubbly. Garnish with cilantro, sour cream, and lime
Notes
Don't rush the roasting phase for soft potatoes.
Grate cheese from a block for better melting.
Slice a small amount from the bottom of the potato for stability.
