Ingredients

3 large Eggs
1 tablespoon Fish Sauce
1/2 teaspoon Lime Juice or Vinegar
1 teaspoon Cornstarch or Rice Flour
1/2 cup Neutral Cooking Oil
1–2 Thai Chilies (optional), sliced
1 tablespoon Green Onions, chopped


Instructions

  1. Crack the eggs into a medium-sized mixing bowl and add the fish sauce, lime juice, and cornstarch or rice flour. Whisk until frothy
  2. Heat neutral oil in a small wok or high-sided heavy skillet over medium-high heat
  3. Pour the whisked egg mixture from about 10 to 12 inches above the hot oil
  4. Fry undisturbed for about 30 to 45 seconds until golden and firm. Flip and fry the other side for another 30 seconds
  5. Drain on a wire rack or paper towels before serving

Notes

Serve immediately for the best texture.

Can be served over jasmine rice or with a side of Sriracha.
