Description

Thai Peanut Chicken Quesadillas are a quick and easy fusion dish that combines the comfort of Mexican quesadillas with the rich, nutty flavors of Thai cuisine, perfect for using up leftovers.


Ingredients

2 cups Cooked Chicken (shredded or diced)
4 units Flour Tortillas (large)
1/3 cup Creamy Peanut Butter
2 tablespoons Soy Sauce
1 tablespoon Honey or Maple Syrup
1 tablespoon Lime Juice
1 teaspoon Sriracha or Chili Flakes
1.5 cups Shredded Mozzarella or Monterey Jack
1/4 cup Fresh Cilantro (chopped)
2 units Green Onions (sliced)


Instructions

  1. Step 1: Make the Magic Sauce. In a small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and sriracha. If your peanut butter is too stiff, pop it in the microwave for 10 seconds
  2. Step 2: Prep the Chicken. Take your cooked chicken and put it in a medium bowl. Pour about three-quarters of the peanut sauce over the chicken. Toss it around until every piece is coated
  3. Step 3: Assemble the Quesadilla. Lay a tortilla flat on your workspace. Sprinkle a thin layer of cheese over one half of the tortilla. Next, add a generous scoop of the peanut chicken mixture. Top with green onions and cilantro, then another layer of cheese
  4. Step 4: The Sizzle. Heat a large skillet over medium heat, lightly greased. Fold the tortilla in half over the filling and cook until the bottom is golden brown and crispy, about 2-3 minutes
  5. Step 5: The Flip. Use a wide spatula to flip it carefully and cook for another 2 minutes until the second side is crispy
  6. Step 6: Slice and Serve. Move the quesadilla to a cutting board, let it sit for one minute, then cut it into wedges

Notes

Use rotisserie chicken for convenience and save time.

Don't overstuff the quesadilla to ensure easy flipping.
