Ingredients
1.5 lbs Chicken Breast or Thighs (cubed)
1/2 cup Creamy Peanut Butter
3 tbsp Low-Sodium Soy Sauce
2 tbsp Honey or Agave Nectar
1 unit Fresh Lime Juice
1 tbsp Fresh Ginger (grated)
3 cloves Garlic (minced)
1 tbsp Sriracha or Chili Paste
2 units Bell Peppers (sliced)
1 cup Snap Peas or Broccoli
Crushed Peanuts & Cilantro (to taste)
Instructions
- Whisk together peanut butter, soy sauce, honey, lime juice, ginger, garlic, and Sriracha in a small bowl and set aside
- Heat a large wok or skillet over high heat, add oil, and sear the cubed chicken until golden brown, then remove from the pa
- Add sliced bell peppers and snap peas to the same pan and stir-fry for about three minutes
- Return the chicken to the pan and pour the peanut sauce over everything, tossing vigorously to coat
- Remove from heat and let residual heat finish cooking, then serve with garnishes
