A warm vanilla-cinnamon cup
Atole is a warm masa-based drink with many preparations. This working version gently cooks a masa-harina slurry in cinnamon-scented milk and finishes with vanilla.

It is intentionally different from the chocolate champurrado drafted for November 9. The exact thickness and four-cup yield still need a kitchen test.
Masa harina, not ordinary cornmeal
Masa harina is flour made from nixtamalized corn and contributes the characteristic body. It is not interchangeable with coarse cornmeal or cornstarch without changing the drink.
Use cool water for the slurry before it enters hot milk; this helps prevent dry clumps. Whole milk adds dairy richness, which must be disclosed.
Ingredients for 4 small cups
| Ingredient | Amount | Use |
|---|---|---|
| Whole milk | 3 cups | Heat gently, not to a hard boil. |
| Cool water | 1 cup | For a smooth masa slurry. |
| Masa harina | 1/3 cup | Use nixtamalized corn flour, not regular cornmeal. |
| Granulated sugar | 1/4 cup | Adjust only after a trial. |
| Cinnamon stick | 1 stick | Steep and remove. |
| Vanilla extract | 1 1/2 teaspoons | Add after cooking. |
| Fine salt | 1/8 teaspoon | Balance sweetness. |
Step-by-step method
- Whisk 1/3 cup masa harina into 1 cup cool water until smooth and free of visible dry pockets. In a medium heavy-bottomed saucepan, warm 3 cups whole milk, 1/4 cup sugar, one cinnamon stick and 1/8 tsp salt over medium-low heat, stirring until sugar dissolves, about five minutes.
- Whisk the masa slurry again, then pour it gradually into the warm milk while whisking. Keep heat low enough for a gentle simmer, not a rolling boil, and whisk frequently, scraping the bottom.
- Cook approximately 15–20 minutes until the mixture loses a raw-flour taste and lightly coats a spoon. If it thickens more than intended, record the consistency in the trial rather than assuming an unmeasured splash of liquid.
- Remove the cinnamon stick, stir in 1 1/2 tsp vanilla extract and ladle into four provisional small cups. Let stand briefly before sipping; verify final volume, thickness and sweetness in a kitchen test.
Whisk through a gentle simmer
Warm milk with a cinnamon stick and sugar, then whisk in freshly stirred masa slurry in a thin stream. Scrape the base of the pot frequently so thickened starch does not stick.
Keep heat gentle and continue until there is no raw masa taste. Stir vanilla in after turning off the heat. A hard boil is not the goal.
Sweetness and texture
The draft uses a measured quarter cup of sugar for four provisional small cups. Taste the tested batch before changing it; less sugar will change flavor but should not be marketed with a health claim.
Masa thickens on standing. Note the thickness at service and after cooling during a trial before promising a specific reheating texture.
Serve and handle
Remove the cinnamon stick before ladling into cups. Let the drink cool briefly to a comfortable sipping temperature.
This dairy drink should not be left out indefinitely at a buffet. A precise storage interval and reheating instruction have not been validated for this formula.
Vanilla atole questions
Does this atole contain chocolate?
No. The planned cup is flavored with vanilla and cinnamon, unlike champurrado.
Why start with cold water?
It disperses masa harina before the slurry meets warm milk, reducing lumps.
Can I use regular cornmeal?
Not as a direct swap. Its grind and processing differ from masa harina.
