Masala Chai from Whole Spices

Masala Chai from Whole Spices. A small pot of black tea simmered with crushed cardamom, cinnamon, cloves, pepper and ginger, finished with milk. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A real spice-and-tea pot

Lightly crushed cardamom and pepper join cinnamon, cloves and ginger in a water infusion; black tea and milk finish the drink. This is a brewed beverage rather than an instant chai powder or a coffee syrup.

The recipe is untested, including its spice strength and four-cup finished yield. Evaporation and cup size should be measured before publication.

Why crush whole spices?

A light crush opens cardamom pods and peppercorns without leaving powdered grit in the cup. The cinnamon stick is broken once, and ginger is sliced. All solids are strained out before serving.

Use a plain robust loose black tea. Tea brands and leaf size vary, so two tablespoons do not establish a caffeine amount or an identical strength in every pot.

Step-by-step method

  1. Lightly crush six green cardamom pods and four black peppercorns; break one cinnamon stick. Bring 2 cups water to a simmer with cardamom, cinnamon, four whole cloves, a sliced 1-inch ginger piece and the peppercorns. Simmer gently about ten minutes.
  2. Add 2 tbsp loose black tea leaves, turn the heat low and steep about three minutes. Stir in 2 cups whole milk and 2 tbsp granulated sugar; heat gently until steaming and fully hot, approximately two minutes, without leaving the pot to boil over.
  3. Strain carefully into four heatproof cups, removing all whole spices and tea leaves. Taste and record how strong the tea and spices are with the measured water and milk.
  4. Serve warm. Measure actual finished volume after evaporation; four one-cup servings are a planning amount rather than a tested yield. Do not infer a caffeine quantity from the tablespoons of tea.

Simmer spices before tea

Ten minutes in gently simmering water give whole spices a chance to infuse. Tea joins for a much shorter, approximately three-minute brew; prolonged boiling can make the result harsh.

Ministry of Curry offers a related whole-spice masala chai. This working version specifies a four-cup water-and-milk pot with measured sugar, but still needs a sensory trial.

Heat milk gently

Add the whole milk and sugar after the tea has brewed, then heat until steaming. Watch the pan: milk can rise quickly at a hard boil. Strain into heatproof cups so no clove or peppercorn remains in a sip.

Two tablespoons sugar are included in the base card; reducing or omitting them is a personal serving adjustment, not a nutrition claim. A plant-milk alternative needs a separate texture and label check.

Serving and freshness

Serve the strained chai warm from the pot. Photograph the whole spices beside the cups as props, not floating unnoticed in the finished drink.

The draft does not assert a refrigerator storage period or reheated flavor. Measure final volume and document whether the tea turns bitter during any proposed holding period.

Masala chai questions

Is chai the same as a latte syrup?

No. This version brews loose black tea with spices and milk; coffee syrup is not an ingredient.

Can I use ground spices?

Not as a direct swap. Powder can leave sediment and changes the extraction rate.

Does it contain caffeine?

It contains black tea, but no per-cup caffeine number has been calculated or verified.
