Description

Zucchini and Beef 'Power' Patties are flavorful, nutrient-dense patties that combine lean grass-fed beef with grated zucchini for a moist and healthy meal option. Packed with protein and hydrating vegetables, these patties are perfect for meal prep or as a special dish for cookouts.

Ingredients

Scale

1 lb Ground Beef (90% lean)
2 cups Grated Zucchini
1 unit Large Egg
1/4 cup Almond Flour
3 cloves Minced Garlic
1/4 cup Chopped Fresh Parsley
Sea Salt and Black Pepper to taste
1 tsp Smoked Paprika

Instructions

  1. Grate the zucchini and squeeze out excess moisture
  2. In a large mixing bowl, combine the grated zucchini, ground beef, minced garlic, chopped parsley, egg, almond flour, sea salt, black pepper, and smoked paprika
  3. Mix the ingredients gently with your hands until combined
  4. Divide the mixture into eight equal portions and shape into patties
  5. Heat a skillet over medium-high heat with a touch of avocado oil
  6. Sear the patties for 4-5 minutes per side until golden brown and cooked through

Notes

Make sure to squeeze the zucchini dry to prevent sogginess.

For meal prep, patties can be stored in the refrigerator for up to four days or frozen for three months.
