Buffalo Cauliflower Bites

Buffalo Cauliflower Bites. Baked cauliflower florets in a light flour coating, finished with a hot-sauce-butter glaze for game-day or holiday snacking. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A vegetable appetizer with buffalo heat

These medium cauliflower florets get a light batter and two short trips through a hot oven. The first dries and browns the coating; the second sets a butter-and-hot-sauce finish.

Chefly's buffalo chicken pasta and bowls are meat dishes rather than this party vegetable. The cauliflower formula is an untested working draft and should not be advertised as vegan because it includes butter.

Cut and dry the florets

Similar-size pieces cook more evenly. Very tiny florets risk burning while large stems stay firm. Pat the cauliflower dry so the flour-water coating sticks instead of slipping off.

A three-quarter-cup flour and water batter should coat lightly, not form heavy nuggets. If the first test looks thick, record the actual amount clinging to the pieces before changing the ratio.

IngredientAmountUse
Cauliflower, cut into medium florets1 large headAbout 2 pounds before trimming; dry well.
All-purpose flour3/4 cupLight coating.
Water3/4 cupCoating batter.
Garlic powder1 teaspoonCoating batter.
Smoked paprika1/2 teaspoonCoating batter.
Fine salt1/2 teaspoonCoating batter.
Unsalted butter, melted3 tablespoonsBuffalo glaze.
Cayenne-style hot sauce1/3 cupBuffalo glaze; check label and heat.

Step-by-step method

  1. Heat oven to 450°F and line two large rimmed baking sheets with parchment. Cut one large cauliflower head into similar medium florets and pat dry. Whisk 3/4 cup flour, 3/4 cup water, 1 tsp garlic powder, 1/2 tsp smoked paprika and 1/2 tsp salt into a loose coating batter.
  2. Toss florets in the batter, letting excess drip off. Arrange in a single layer on the sheets without crowding. Bake approximately 20–25 minutes, turning carefully halfway, until coating is dry and edges begin to brown.
  3. Whisk 3 tbsp melted butter with 1/3 cup cayenne-style hot sauce. Toss baked florets gently with the mixture, return to the sheets and bake another approximately 8–10 minutes until glazed and the cauliflower is tender with browned tips.
  4. Serve warm in six appetizer portions. Record actual floret count, coating adhesion and whether the glaze softens the bite in a kitchen trial; optional dipping sauce is not included in this measured recipe.

Bake before adding sauce

Space the pieces on two sheets to prevent steaming. Turn carefully after the coating begins to set, then look for dry surfaces and browned edges before saucing.

Love and Lemons also uses a battered cauliflower bake followed by buffalo flavor. This proposal differs in butter glaze, seasoning and measurements; it does not copy its instructions or establish this batch's texture.

Glaze and serve promptly

Melted butter and cayenne-style hot sauce make a glossy finish with no separate dipping sauce in the measured ingredients. Check hot-sauce salt and heat before declaring a universal spice level.

The short second bake aims to make the coated florets tender while keeping some browned tips. Serve soon after cooking; holding under a cover can steam the coating soft.

Keeping and variations

No exact crispness after reheating, storage period or air-fryer conversion has been tested. Record what happens to leftover coating before suggesting a make-ahead party timetable.

A dairy-free butter substitute or gluten-free flour is not a silent swap; each changes coating and labels and needs its own measured trial.

Buffalo cauliflower questions

Is this the same as buffalo chicken?

No. Cauliflower is the main ingredient; no chicken is in the working card.

Why bake twice?

The first bake dries the batter; the brief second bake sets the sauce after coating.

Is it vegan?

No. The proposed glaze uses dairy butter.
