A small-table poultry centerpiece

Two Cornish hens with lemon zest, thyme and rosemary offer four half-hen portions for a small holiday table. The size and plating differ from Chefly's existing lemon-garlic-thyme roast chicken, which remains the better destination for a full-sized bird.

This is an untested formula. Package weights and oven behavior vary, so the thermometer endpoint matters more than a promised one-hour roast.

Prepare the birds and herb oil

Fully thaw the hens before roasting, remove any giblets and pat the skin dry. Keep raw-poultry handling separate from ready-to-eat food; the linked FDA guidance covers handwashing and cross-contamination.

Mix measured lemon juice and zest with olive oil, chopped herbs, garlic, salt and pepper. Keep lemon wedges loose in the pan rather than tightly stuffing the cavities, which could complicate even heating.

Step-by-step method

  1. Heat oven to 400°F. Remove any giblets from two fully thawed Cornish hens. Pat dry with paper towels, then clean and sanitize hands and surfaces that contacted raw poultry. Set the birds breast-side up on a rack in a roasting pan.
  2. Mix 2 tbsp olive oil, 1 tbsp lemon zest, 2 tbsp lemon juice, 1 tbsp chopped thyme, 1 tsp chopped rosemary, two minced garlic cloves, 1 tsp salt and 1/2 tsp pepper. Rub over the outside of both hens; arrange wedges from one lemon around them in the pan.
  3. Roast approximately 60–65 minutes, rotating the pan if browning unevenly. Check the thickest breast and innermost thigh with an instant-read food thermometer without touching bone; continue roasting until every checked poultry location reaches 165°F. Shield skin loosely with foil if it browns before the interior reaches temperature.
  4. Rest the hens about ten minutes, then use clean shears to halve each lengthwise for four servings. Record actual weights, measured endpoint and time in a kitchen trial. Do not claim a fixed time replaces the thermometer.

Roast to a measured endpoint

Place the hens on a rack with space between them so hot air can reach the sides. Start checking toward the end of the estimated 60–65 minutes. Insert the thermometer into the thickest breast and innermost thigh without contacting bone.

Continue until all measured locations reach 165°F. If the outside becomes too dark first, tent loosely with foil. A photograph of golden skin cannot verify the inside is cooked.

Rest and divide

Let the birds rest roughly ten minutes, then halve each with clean shears. Four half-hen servings are a planning yield; test whether the actual purchased birds and accompaniments make that portion satisfying.

Record the exact package weights and measured roast time during a trial. Those details will be more useful to a reader than a universal minute-per-pound promise.

Serving and leftovers

A simple vegetable side or potatoes can accompany the hens without becoming part of the measured recipe. Keep the plated image focused on the small birds and their lemon-herb coating.

Follow current FDA handling advice for prompt refrigeration of cooked leftovers. Storage duration and reheated quality should be finalized after the kitchen test rather than borrowed from a different poultry recipe.

Cornish hen questions

Are these small chickens?

The working card uses two packaged Cornish game hens, about 1 1/2 pounds each, not a full-size roasting chicken.

How do I know they are done?

Check thick breast and inner thigh without touching bone; each measured location must reach 165°F.

How many people does the recipe serve?

It proposes four half-hen portions from two hens; confirm actual size in the kitchen trial.
