A brown butter apple galette has the informal look of a folded pastry with apples visible in the center, but the filling still needs a deliberate balance. This proposed version uses a simple all-butter crust and tosses three sliced baking apples with two tablespoons browned butter, brown sugar, lemon, cinnamon and cornstarch. The butter’s browned milk solids belong in the filling, not left behind in the skillet. Chill the dough before rolling and let the finished tart cool before cutting. Pastry hydration, filling leakage and the baking window still require a kitchen trial.

Where the brown butter goes
The recipe uses two distinct butter portions. Eight cold tablespoons stay in visible small pieces as the pastry comes together; those are not browned. Two additional tablespoons are cooked in a light-colored skillet until their milk solids turn golden and fragrant, then poured over the apples after a short cool. If all the pastry butter were browned, the water and solid-fat structure of the crust would change. The title refers to the apple filling and its nutty butter aroma, not a browned-butter crust.
King Arthur’s apple-galette guide shows the basic free-form fold and the importance of a cold dough, but uses semolina, buttermilk and pecans. This Chefly proposal has a simpler flour-and-ice-water crust, no nuts and a measured brown-butter filling. It is not a promise that a recipe tested with another flour, apple or pan will behave identically.
Pastry and filling amounts
| Ingredient | Amount | Use |
|---|---|---|
| All-purpose flour | 1¼ cups | Pastry; measure consistently and use a little additional dusting flour only for rolling. |
| Granulated sugar | 1 tbsp | Pastry sweetness. |
| Fine salt | ¼ tsp | In the dough. |
| Cold unsalted butter | 8 tbsp, cubed | Cut into pastry; do not melt. |
| Ice water | Up to 4 tbsp | Start with 3 tbsp, add the measured final tablespoon only if needed. |
| Unsalted butter | 2 tbsp | Brown separately for the apple filling. |
| Firm baking apples | 3 medium, cored and thinly sliced | Keep slices similar in thickness. |
| Packed light brown sugar | ¼ cup | Sweetens the fruit. |
| Cornstarch | 1 tbsp | Helps catch released apple juices. |
| Fresh lemon juice | 1 tbsp | Balances sweetness. |
| Ground cinnamon | ½ tsp | Quiet warm spice. |
Apples vary in size and water content, so three “medium” apples need a weighed, photographed trial before precise yield claims. Choose firm baking fruit that will hold thin slices rather than collapse into sauce. The crust contains wheat and butter; the browned-butter filling adds more milk solids. No vegan or gluten-free label applies. An egg wash, coarse sugar, ice cream or caramel drizzle is not in this base recipe and should not appear in its cover photograph.
Make the crust, brown butter and bake
- Bring the dough together. Mix one and one-quarter cups flour, one tablespoon granulated sugar and one-quarter teaspoon fine salt. Cut in eight tablespoons cold cubed butter until irregular coarse crumbs with some pea-sized butter remain. Add three tablespoons ice water, then the last measured tablespoon only if needed to make the dough hold when pressed. Flatten into a disk, wrap and chill 45 minutes.
- Brown the separate filling butter. Melt two tablespoons unsalted butter in a small light-colored skillet over medium heat, swirling and watching the bottom. When the milk solids turn golden-brown and the butter smells nutty, about five minutes, immediately pour into a cool bowl with the browned bits. Let it cool about five minutes while preparing fruit.
- Mix the apples. Core and thinly slice three firm baking apples. Toss with the cooled browned butter, one-quarter cup packed brown sugar, one tablespoon cornstarch, one tablespoon lemon juice and one-half teaspoon cinnamon. Heat the oven to 400°F and line a rimmed baking sheet with parchment.
- Roll and fold. On a lightly floured surface, roll the chilled disk to roughly a twelve-inch circle and transfer it to the sheet. Arrange apples across the center, leaving a two-inch border. Spoon over the measured filling juices. Fold the exposed pastry edge up over the fruit in loose overlapping pleats; the middle remains open.
- Bake and cool. Bake about 35–45 minutes until the crust is deep golden and apples tender. If the edge colors too fast, shield it loosely while the fruit finishes. Rest on the sheet for twenty minutes, then cut eight wedges. Record any leaked juices, soft bottom and exact bake time in a trial.
The working total is 150 minutes: thirty minutes of active prep, five minutes browning butter plus up to forty-five minutes in the oven, forty-five minutes dough chill, five minutes for the brown butter to cool and twenty minutes for the baked galette to settle. Some tasks overlap, so the sum is intentionally conservative; the actual wall time may vary with oven preheat and rolling speed. This is not a tested quick dessert.
Keeping the base crisp and the apples tender
The pastry tears while rolling. A very cold disk can crack at its edges; let it stand just enough to roll without sticking. Press small cracks together before adding fruit. If it is sticky and greasy, return it to the refrigerator. The measured four tablespoons water are an upper starting point, not a cue to add unlimited liquid.
Juice leaks out. Leave a real two-inch border and overlap pleats, without stretching thin dough over a towering filling. Cornstarch needs liquid and heat to thicken; if the chosen apples release much more moisture than expected, record that outcome and adjust the next measured recipe. A rimmed sheet catches any escaping syrup.
The bottom is pale. Let the oven reach 400°F before the sheet goes in, and do not pile apples too thickly at the center. A test can compare a lower oven rack or a preheated surface, but either changes the method and should be documented rather than silently assumed.
Butter looks burned. Watch the solids in a light skillet and pour them out as soon as golden-brown. A dark or bitter blackened butter is not a useful flavor for apples; start the small two-tablespoon portion again rather than hiding it under sugar.
Serving, storage and variations
Serve a wedge warm or at room temperature once the filling has settled. A plain spoonful of whipped cream or ice cream would be an optional table addition, but neither belongs in the measured recipe or nutrition basis. For a dessert spread, Chefly’s Earl Grey cookies are a separate tea-scented option that does not compete for an apple-galette URL.
Keep leftover baked pastry refrigerated after cooling in a covered container, and check how the bottom changes on reheating. This untested formula has no verified storage duration or freezer instructions; a pastry-and-fruit trial should establish those claims. A pear filling, ready-made pastry or browned-butter crust would each be a different version with changed liquid, timing and visuals.
Questions before baking
Do I need a pie pan?
No. A galette is folded around its fruit on parchment atop a rimmed baking sheet. The pan is useful for catching any leak, not for holding a rigid pie wall.
Can I brown all the butter?
Not in this formula. Eight cold tablespoons are needed for the proposed pastry texture, while two tablespoons are browned for the apples. Changing the crust butter would require a new hydration and baking test.
Can I skip the dough chill?
The 45-minute chill is part of the method. Warm, soft pastry may stick to the rolling surface and lose defined butter pieces. If a different schedule is needed, test it and revise the total time honestly.
