A nutty butter cookie with toffee
Brown butter adds toasted aroma to a simple dough with small crunchy toffee bits. This version leaves out chocolate chips so the butter and toffee remain the main flavors.

Two dozen cookies are a working yield. The proposed crisp edge and soft center depend on a kitchen trial of dough chill and pan spread.
Brown the butter deliberately
Use a light saucepan so amber milk solids are easy to see. Remove and pour off heat as soon as the butter smells nutty; residual pan heat can take it from golden to burnt.
Cool before mixing with egg and sugar. Measure the starting butter as three-quarters cup and record loss after browning in the first trial.
Ingredients for 24 cookies
| Ingredient | Amount | Use |
|---|---|---|
| Unsalted butter | 3/4 cup | Brown and cool. |
| Packed light brown sugar | 3/4 cup | Cookie dough. |
| Granulated sugar | 1/4 cup | Cookie dough. |
| Large egg | 1 egg | Cookie dough. |
| Vanilla extract | 1 teaspoon | Cookie dough. |
| All-purpose flour | 2 cups | Spoon and level. |
| Baking soda | 3/4 teaspoon | Cookie dough. |
| Fine salt | 1/2 teaspoon | Cookie dough. |
| Plain toffee bits | 3/4 cup | Check whether chocolate-coated or nut-containing. |
Step-by-step method
- Melt 3/4 cup butter in a light-colored saucepan over medium heat, swirling until golden milk-solid flecks and a nutty aroma develop, approximately eight minutes. Transfer immediately to a heatproof bowl and cool about twenty minutes.
- Beat cooled brown butter with 3/4 cup packed brown sugar and 1/4 cup granulated sugar. Add one egg and 1 tsp vanilla. Whisk 2 cups flour, 3/4 tsp baking soda and 1/2 tsp salt separately; combine with wet ingredients and fold in 3/4 cup plain toffee bits. Chill dough one hour.
- Heat oven to 350°F. Scoop twenty-four similar dough mounds on two lined sheets, leaving space. Bake one sheet at a time approximately 10–11 minutes until edges are golden and centers set but still slightly soft.
- Cool on the sheets briefly, then on a rack for about twenty minutes. Record butter loss, spread, toffee distribution and actual twenty-four-cookie yield in a kitchen trial.
Choose plain toffee bits
Some bags have chocolate coatings or nuts, which would change the recipe and image. Check the label and use plain bits for this working formulation.
Sally's Baking has a brown-butter toffee chocolate-chip cookie reference. This no-chip version has different quantities and cannot borrow its tested spread.
Chill and portion evenly
After combining wet and dry ingredients, chill for an hour. Equal small scoops on two baking sheets give a clearer comparison of edge color.
If the first tray spreads widely, note butter temperature and actual chill before changing the flour ratio.
Bake and assess keeping
Remove when edges are golden and centers look set but still soft. Cool fully before stacking; warm toffee can be sticky.
No exact storage life or gift-mailing texture has been measured. Wheat, egg, milk and toffee-label allergens must be reviewed.
