A masa-thickened chocolate drink

Champurrado is a warm Mexican chocolate atole thickened with masa harina. This working small-pot version uses milk, Mexican chocolate, piloncillo and a cinnamon stick.

It is not an ordinary hot cocoa or a syrup stirred into coffee. Four small servings and the intended spoon-coating consistency still need a kitchen trial.

Use masa harina, not cornstarch

Masa harina contributes corn flavor as well as thickness. Whisk it smooth with warm water before adding it to the milk so dry lumps do not hide in the finished cup.

Mexican chocolate often contains sugar and cinnamon, so brand choice changes sweetness. Piloncillo is separately measured; do not add unrecorded sugar before tasting a trial.

Step-by-step method

  1. Warm 2 1/2 cups whole milk in a heavy saucepan over medium-low heat with 3 oz chopped Mexican chocolate, 2 oz finely chopped piloncillo and one cinnamon stick. Stir until chocolate and piloncillo dissolve without scorching the milk.
  2. Whisk 1/3 cup masa harina with 1 1/4 cups warm water in a separate bowl until completely smooth. Pour slowly into the chocolate milk while whisking constantly.
  3. Bring to a gentle simmer and cook approximately 15–20 minutes over low heat, whisking often and scraping the pan bottom, until the drink thickens enough to coat a spoon without raw masa taste. Stir in 1 tsp vanilla and 1/8 tsp salt.
  4. Remove the cinnamon stick, straining if it has broken, and divide among four heatproof small cups. Record actual viscosity, sweetness, chocolate brand, masa brand and finished volume in a kitchen trial.

Dissolve chocolate gently

Warm milk with chocolate, chopped piloncillo and one whole cinnamon stick over moderate-low heat. Stir the pan bottom to keep milk and sugar from scorching.

Isabel Eats documents the masa-harina, Mexican-chocolate and piloncillo combination. This draft uses its own smaller milk-to-water balance and does not claim its texture was observed.

Whisk to a velvety finish

Pour the smooth masa mixture into the chocolate milk gradually, then simmer gently for an estimated fifteen to twenty minutes while whisking. It should coat the back of a spoon without tasting of raw flour.

If it becomes too thick or too thin, record the measured final volume and exact brands before adjusting the ratio. Remove the cinnamon stick before pouring.

Serve and assess leftovers

Pour hot into four small heatproof cups; the exact ounces per cup depend on evaporation. This contains dairy milk and is not a vegan beverage.

No storage period or reheat thickness has been established for this proposed batch. The photo should show a thick smooth chocolate drink and relevant masa and piloncillo props.

Champurrado questions

Is it thickened with cornstarch?

No. The measured thickener is masa harina.

Can I use a generic chocolate bar?

Mexican chocolate is specified; changing its sugar and spice profile needs a measured revision.

When does vanilla go in?

Near the end, after the drink has thickened.
