Chocolate Chess Pie. A baked chocolate custard-style chess pie in a 9-inch pastry shell, cooled fully before slicing. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A baked chocolate filling
Chocolate chess pie sets a cocoa-and-egg filling in a pastry shell. The top may form a thin crackly layer while the center cools into a sliceable texture.

This is not the lemon meringue pie from the preceding date: it has no lemon custard or whipped white topping. The eight-slice yield and center texture are untested.
Whisk dry ingredients first
Disperse cocoa and flour through the sugar before adding eggs, melted butter and evaporated milk. That helps avoid cocoa pockets in a otherwise smooth filling.
Evaporated milk is unsweetened concentrated milk, not sweetened condensed milk. A direct swap would change both sugar and set.
Ingredients for 8 slices
| Ingredient | Amount | Use |
|---|---|---|
| Unbaked 9-inch pie shell | 1 shell | Fit into plate; check purchased or homemade formula. |
| Granulated sugar | 1.25 cups | Filling. |
| Unsweetened cocoa powder | 1/4 cup | Filling. |
| All-purpose flour | 2 tablespoons | Filling. |
| Fine salt | 1/4 teaspoon | Filling. |
| Large eggs | 3 eggs | Filling. |
| Unsalted butter, melted and cooled | 1/2 cup | Filling. |
| Evaporated milk | 1/2 cup | Not sweetened condensed milk. |
| Vanilla extract | 1 teaspoon | Filling. |
Step-by-step method
- Heat oven to 350°F and fit one unbaked 9-inch pie shell into a pie plate. Whisk 1 1/4 cups granulated sugar, 1/4 cup unsweetened cocoa, 2 tbsp flour and 1/4 tsp salt until no large cocoa lumps remain.
- Whisk in three eggs, 1/2 cup melted cooled butter, 1/2 cup evaporated milk and 1 tsp vanilla until smooth. Pour into the unbaked pastry shell, leaving space below the rim.
- Bake on a rimmed baking sheet approximately 45–50 minutes until the edges are set, the center has only a slight wobble and a thermometer in the egg-containing filling reads at least 160°F. If crust edges darken early, shield them loosely.
- Cool on a rack at least two hours before cutting eight wedges. Record actual pan clearance, center set, surface cracks and cooled slice structure during a kitchen trial.
Fill and bake carefully
Keep the unbaked shell seated in a 9-inch plate and pour below the rim. A rimmed baking sheet makes moving a liquid pie easier.
Sally's Baking offers a chocolate chess pie reference; this version's dairy and flour proportions are separate. Baking for fifty minutes alone cannot verify its egg-containing center, so measure 160°F and note the wobble.
Cool fully to slice
The filling firms while cooling. Wait at least two hours on a rack before evaluating a wedge rather than cutting when it still flows.
If the center remains loose or the top cracks dramatically, record temperature, plate material and actual oven time in the first trial before revising.
Serve and assess storage
Serve a plain wedge to show pastry, dark filling and thin top. Added cream or ice cream would be optional accompaniments, not measured ingredients.
No exact refrigerated storage or make-ahead texture has been confirmed for this proposed pie. The shell and filling carry wheat, egg and milk allergens.
Chess pie questions
Is the shell blind baked?
No. The working chocolate filling is poured into an unbaked shell and baked together.
Can I use condensed milk?
Not directly. This formula specifies unsweetened evaporated milk.
When can I cut it?
After at least two hours of cooling, once the center is sliceable.
