Red Velvet Cream Cheese Cookies

Red Velvet Cream Cheese Cookies. Small red cocoa cookies baked around a tangy cream-cheese center, with a measured chilling stage. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

Red cocoa outside, tangy center

These small red velvet cookies wrap a cream-cheese filling inside a lightly cocoa-flavored dough. One cut cookie should show a pale center against a red crumb, without an external frosting swirl.

The batch is a working twenty-four-cookie plan. The filling may spread or leak, so a kitchen trial is essential before promising the appearance.

Firm the filling first

Portion the sweetened cream cheese into equal small dollops and freeze about half an hour. A firm center is easier to enclose than a soft spread.

Cream cheese, butter, buttermilk and egg are in the measured formula. Do not label the cookies dairy-free, and check the food-coloring ingredient panel.

Unsweetened cocoa powder2 tablespoonsCookie dough.
Baking soda1/2 teaspoonCookie dough.
Fine salt1/4 teaspoonCookie dough.
Buttermilk1 tablespoonCookie dough.

Step-by-step method

  1. Beat 4 oz cream cheese and 1/4 cup confectioners' sugar until smooth. Drop twenty-four small equal portions on parchment and freeze about thirty minutes so each can be enclosed cleanly.
  2. Beat 1/2 cup softened butter and 3/4 cup granulated sugar, then add one egg, 1 tsp vanilla and 1 tsp red gel coloring. Whisk 1 1/2 cups flour, 2 tbsp cocoa, 1/2 tsp baking soda and 1/4 tsp salt; combine with the butter base and 1 tbsp buttermilk. Chill dough about thirty minutes.
  3. Heat oven to 350°F. Divide dough into twenty-four pieces, flatten each, enclose one firm cream-cheese portion and seal seams completely. Arrange on two lined sheets with room for spread. Bake one sheet at a time approximately 10–12 minutes until edges set and centers no longer look raw.
  4. Cool on the sheets briefly, then on a rack before cutting a sample to check the cream-cheese center. Record spread, color, filling leakage and actual twenty-four-cookie yield in a kitchen trial; keep the dairy-filled cookies refrigerated.

Build the red cocoa dough

Mix butter and sugar, then egg, vanilla and measured red gel coloring. Cocoa is only two tablespoons, so this is a mild red-velvet flavor rather than a dark chocolate cookie.

The thirty-minute dough chill helps with wrapping. If the first trial is too sticky, record temperature and timing rather than adding unmeasured flour.

Seal and bake

Flatten each dough portion, enclose one frozen cream-cheese center and pinch seams shut. Leave space on lined trays for spread.

Sally's Baking demonstrates the stuffed red-velvet format; the dough, filling and red-color dose here are independent proposals. Bake until dough edges set, then cool and cut a sample before finalizing instructions.

Serving and holding

One filled cookie is the provisional serving. Keep the cream-cheese-filled finished batch refrigerated and evaluate actual texture after chilled holding.

The site has a red velvet cheesecake layer cake, but that existing page should not be treated as this separate cookie. Final body-equivalence and image review remain.
