Cream Cheese Rugelach with Walnut Filling

Cream Cheese Rugelach with Walnut Filling. Working cream-cheese rugelach with a thin apricot-jam layer, cinnamon walnuts and a flaky crescent shape. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A crescent cookie with a little tart fruit

Rugelach is a rolled pastry rather than a cutout cookie. Cold butter and block cream cheese make a tender dough that can be rolled into circles and cut like wedges of a pie. Here, each wedge carries a restrained swipe of apricot jam and a finer crumble of cinnamon walnuts; the fruit should brighten the nuts without leaking out as a thick filling.

This is an original working formula, not a reported kitchen test. It makes a proposed thirty-two small crescents from two disks, and the three-hour-ten-minute total includes two sequential bakes, chilling and cooling. The actual dough diameter, filling retention and batch clock require a trial before the recipe or image is treated as finished.

What belongs in the dough and filling

The pastry uses two cups all-purpose flour, one stick of cold unsalted butter, eight ounces cold block cream cheese, salt and vanilla. A tub-style spread may have a different moisture balance and is not the specified ingredient. Cut butter and cheese into small cubes and stop processing when clumps form; excessive handling warms the fat and makes rolling sticky.

Walnuts should be finely chopped rather than left as large halves. Mix them with light brown sugar and cinnamon before sprinkling so each wedge receives both nuts and spice. The jam is one-quarter cup for the entire batch, about two tablespoons per circle. Smooth any large fruit pieces so they do not tear thin dough. A thick spread is more likely to run onto the sheet.

Egg and water are only for an exterior wash, followed by a tablespoon of coarse sugar across all thirty-two cookies. They are not part of the dough. The allergens are wheat, dairy, egg and walnuts; a fruit jam does not make the cookie suitable for someone avoiding any of those ingredients.

Water1 tablespoonWhisk with the egg wash.
Coarse sugar1 tablespoonFor the exterior before baking.

Step-by-step method

  1. Pulse 2 cups flour and 1/4 tsp fine salt with 8 tbsp cold cubed butter and 8 oz cold cubed cream cheese just until coarse clumps form. Add 1 tsp vanilla and pulse briefly; squeeze a little dough to check it holds. Divide into two disks, wrap and refrigerate at least 60 minutes.
  2. Stir 3/4 cup finely chopped walnuts with 1/3 cup packed brown sugar and 1 tsp cinnamon. Heat oven to 350°F and line two sheets with parchment. Roll the first cold disk on a lightly floured surface into a roughly 10-inch circle. Spread 2 tbsp of the 1/4 cup apricot jam thinly, leaving a narrow rim, then scatter half the walnut mixture evenly.
  3. Cut the circle into 16 wedges. Roll each wedge from its wide outer edge toward the point and place seam down on a sheet. Repeat with the second disk and remaining jam and walnuts for 32 crescents. Refrigerate shaped cookies 20 minutes while the oven finishes heating.
  4. Whisk 1 egg with 1 tbsp water; brush the crescents lightly and scatter up to 1 tbsp coarse sugar across them. Bake sheets one at a time at 350°F for approximately 20–25 minutes each, until deeply golden at the edges and pastry looks dry. Cool on the sheet briefly, then on a rack about 20 minutes; document real batch timing and yield.

Roll the disks, then the crescents

Chill two wrapped disks for at least an hour. Roll only one at a time while the other stays cold. Aim for a roughly ten-inch circle that can be divided into sixteen narrow wedges; if it cracks, let it stand briefly, and if it grows sticky, return it to the refrigerator. A light dusting of flour helps, but heavy extra flour makes the pastry tougher.

Spread half the jam in a thin film and scatter half the walnut mixture over it. A small bare rim at the edge and light, even filling make it easier to roll from the wide edge inward. Put the points and seams underneath to discourage unrolling. Repeat with the second disk for a full thirty-two rather than quietly implying a one-disk yield.

A twenty-minute chill after shaping makes the pastry less likely to slump. Brush lightly with egg wash, sprinkle coarse sugar and bake one sheet at a time at 350°F. The twenty-to-twenty-five-minute oven window is a starting estimate; look for golden edges and a dry pastry surface. Separate batches extend wall-clock time beyond a single simultaneous bake, so the handoff must be revised if the oven cannot hold two sheets effectively.

If the filling leaks or dough fights back

Jam pooling on the parchment suggests either too much jam in one spot or dough that softened during shaping. Next trial, measure the two-tablespoon portion for each disk and record the chilled dough temperature and oven behavior before changing the formula. Some bubbling at the edges is plausible; a huge sticky pool is not the intended result.

If walnut pieces puncture the wedges, chop them smaller. A coarse processor pulse is enough to cut the pastry fat in, but a warm, smooth paste would make a different dough. If the crescents open in the oven, turn the point underneath and chill the shaped sheet as directed.

Once Upon a Chef's reference also uses cream-cheese dough and walnuts, but its raisin-based filling is a different recipe. This Chefly candidate has an apricot-jam layer and should remain separate from the local Polish kolaczki handoff, which uses a different fold and filling presentation. The broader inventory still deserves an editorial pass.

Serving and storing a delicate pastry

Cool on a rack before stacking so residual heat does not soften the bottoms. A closed tin with parchment between layers may work for a short cookie-box handoff, but crispness and the best storage window should be established with the finished test batch. Do not describe these as a long-term shelf-stable edible gift without evaluating the filling and storage.

The small crescents pair with Chefly's Earl Grey cookies as a contrasting texture. The image prompt shows walnuts at the cut center and a narrow apricot line, not powdered sugar or a chocolate coating that never appears in the measured recipe. An actual photo and its rights remain pending.

Questions before the first batch

Could I use another jam?

Possibly, but a wetter preserve or large fruit pieces change leakage. Begin with the thin measured apricot layer, then test any change separately.

Can I skip the chill?

No. Cold dough is central to this working roll-and-fill method, and the total time includes a disk chill and a shaped-cookie chill.

Are the walnuts optional?

Not for this named filling. A nut-free variant would need new proportions and careful cross-contact review, not a silent omission from the card.
