Creamy Parmesan Polenta

Creamy Parmesan Polenta. Soft stovetop polenta made from coarse yellow cornmeal, finished with butter and Parmesan for a spoonable holiday side. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A spoonable side for winter mains

Coarse yellow cornmeal cooks slowly into a soft base for a holiday plate, then butter, milk and Parmesan turn it creamy. It is a side rather than a baked casserole or firm sliced polenta.

Use the right cornmeal

Coarse polenta cornmeal needs time to hydrate. Instant polenta has a different timing and liquid behavior and is not a direct substitution for the cup measured here.

Four cups water start the simmer; the warm half-cup milk goes in after the grains are tender. Finely grated Parmesan disperses more evenly than large shreds. Check the cheese label if a specific dietary claim would be made.

Unsalted butter2 tablespoonsStir in off heat.
Finely grated Parmesan3/4 cupMeasure lightly; stir in off heat.
Whole milk1/2 cupWarm and add at end for spoonable texture.

Step-by-step method

  1. Bring 4 cups water and 3/4 tsp fine salt to a boil in a heavy medium saucepan. Reduce to a steady simmer, then pour in 1 cup coarse yellow polenta cornmeal in a thin stream while whisking constantly to avoid lumps.
  2. Cook on low heat approximately 35–40 minutes, stirring frequently and scraping the pot bottom, until grains are tender rather than gritty. If the mixture stiffens before tenderness, add a measured splash of hot water and record how much.
  3. Remove from heat. Stir in 2 tbsp unsalted butter, 3/4 cup finely grated Parmesan and 1/2 cup warm whole milk. Mix until smooth and loose enough to spoon; taste for salt.
  4. Divide promptly into six side portions and record actual finished volume, grind and liquid adjustments in a kitchen test. Polenta firms as it cools; a reheated version needs measured additional liquid rather than the same spoonable claim.

Whisk in a thin stream

Reduce boiling water to a simmer and pour the dry meal gradually while whisking. Dumping it all at once can trap dry lumps inside a cooked outer layer.

Stir and scrape the bottom often during the estimated 35–40-minute cook. A heavy pot and low heat reduce sticking. If the cornmeal is still gritty when the pot looks thick, add measured hot water and keep cooking.

Finish off heat

Once the grains are tender, remove the pot from heat before adding butter, Parmesan and warm milk. The result should mound softly on a spoon and relax into the bowl.

This texture changes quickly as polenta cools. Record the final amount of liquid and yield during a kitchen test instead of asserting that every grind needs exactly the same amount.

Serve and reheat

Spoon into six small side portions immediately. A roast or sautéed vegetables can sit alongside without becoming part of the measured card or image.

Reheated polenta usually needs extra liquid and stirring to return to a creamy texture; the exact amount for this formula is not verified. Do not promise the same fresh-made result from an untested make-ahead batch.

Polenta questions

Can I use instant polenta?

Not with this timing; instant meal needs its own package method and measured ratio.

Why does it thicken after serving?

The cornmeal continues to absorb liquid as it cools. Serve promptly for the working spoonable texture.

Is Parmesan included in the card?

Yes, three quarters of a cup is stirred into the finished polenta.
