A slow-cooker lentil dinner

Dry brown lentils, coconut milk, tomato and warm curry spices simmer into a spoonable meal with spinach added near the end. It is a separate plant-forward dinner from Chefly's Thai red curry chicken bowls.

The six-hour LOW cook is a working estimate. Cooker dimensions, lentil age and brand can change tenderness, and six bowls require a final cooked-volume check.

Choose brown lentils

Brown lentils tend to hold some shape in a slow cooker, whereas split red lentils would cook into a different texture. Sort and rinse the dry lentils; the card does not call for canned cooked lentils.

Coconut milk adds body, and tomato with three cups broth provides the starting liquid. Curry powders vary in spice and salt, so use a mild blend and adjust at the end rather than promising one precise heat level.

Step-by-step method

  1. Sort and rinse 1 1/2 cups dry brown lentils. Add to a 5- to 6-quart slow cooker with one diced onion, three minced garlic cloves, 1 tbsp grated fresh ginger, 2 tbsp mild curry powder and 1 tsp ground cumin.
  2. Stir in one 14.5-oz can diced tomatoes with juices, one 13.5-oz can full-fat coconut milk, 3 cups low-sodium vegetable broth and 3/4 tsp fine salt. Cover and start cooking promptly.
  3. Cook on LOW approximately six hours until the lentils are tender throughout, stirring toward the end and adding a measured splash of hot broth only if the mixture becomes unusually dry. Add 3 cups fresh baby spinach, cover and cook approximately fifteen minutes more until wilted and the curry is hot throughout.
  4. Turn off the cooker and stir in 1 tbsp fresh lime juice. Taste and adjust salt, then divide into six working bowls. Measure actual final volume, lentil texture and cooker timing in a kitchen trial; optional rice is not included in the measured card.

Start with the full measured liquid

Combine rinsed lentils, aromatics, spices, tomatoes, coconut milk and broth before switching on the cooker. Stir well so no pocket of dry lentils sits above the liquid.

Budget Bytes provides a related coconut-curry lentil slow-cooker reference. This proposal is separately measured and includes diced tomatoes and a late spinach finish; its performance still needs its own trial.

Check tenderness before spinach

Toward the estimated six-hour mark, taste several lentils for a consistently tender center. If the cooker runs dry, document how much extra hot broth is needed rather than silently changing the formula.

Spinach goes in for only about fifteen more minutes so its color and texture are not lost over the entire cook. Lime juice after turning off the cooker brightens the finished sauce.

Serve and handle leftovers

Measure six equal portions after cooking. Rice would make a useful optional accompaniment but is not part of the recipe's ingredient list, time or proposed nutritional profile.

Move leftovers promptly into appropriate containers and refrigerate under current FDA guidance. No exact freezer texture or storage interval is established for this untested coconut sauce.

Lentil curry questions

Can I use split red lentils?

Not as a direct swap; they break down and need a separately measured cook.

When does spinach go in?

After the brown lentils are tender, for an estimated fifteen final minutes.

Is rice included?

No. The six bowls refer to curry only; rice is an optional serving idea.
