Crispy Polenta Bites with Mushrooms

Crispy Polenta Bites with Mushrooms. Oven-crisped rounds of prepared polenta topped with a thyme-scented sautéed mushroom mixture. The formula and timing below are working estimates for a future kitchen trial, not a claim that a batch has been made.

A warm bite without bread

Firm prepared polenta can be sliced into tidy small rounds, browned in the oven and used as a base for savory mushrooms. This version skips the Fontina in a related Epicurious appetizer; the topping is chopped cremini, shallot, garlic and thyme instead.

Two logs are proposed to make twenty-four half-inch pieces. Packaging sizes and diameters vary, so the actual yield and crisping time need a trial. This is an untested working recipe, not a guarantee that every refrigerated log crisps identically.

Keep both components fairly dry

Pat the cut polenta surfaces before oiling. Excess surface moisture delays browning. A generous single-layer baking sheet lets air move around the rounds; crowding or stacking them gives a soft underside.

Mushrooms release liquid as they cook. Let that evaporate before adding shallot and garlic, then season near the end. If the finished topping is watery, piling it on the bases early will undo their crisp edges.

Step-by-step method

  1. Heat oven to 425°F. Line a large baking sheet with parchment. Slice two roughly 18-ounce firm polenta logs into twelve 1/2-inch rounds each, for twenty-four rounds. Pat surfaces dry; brush both sides with 2 tbsp olive oil and sprinkle with 1/4 tsp salt.
  2. Space the rounds on the sheet. Roast about 22–28 minutes, turning midway, until the edges are golden and surfaces feel firm. If the pan is crowded, use two sheets and revise the actual oven time.
  3. While they roast, heat 1 tbsp olive oil in a skillet over medium-high heat. Cook 12 oz finely chopped cremini mushrooms until released liquid evaporates and they begin to brown, then stir in one small chopped shallot, 1 tsp thyme and one minced garlic clove. Cook until the shallot softens; season with 1/4 tsp salt and 1/4 tsp pepper.
  4. Spoon the warm, relatively dry mushroom mixture evenly over twenty-four crisp rounds just before serving. Do not mound a wet topping early or the bases may soften. Record real round size, log yield, browning and assembly time in a kitchen trial.

Roast the rounds while mushrooms cook

At 425°F, the proposed twenty-two-to-twenty-eight-minute roast is a starting estimate. Turn midway and look for browned edges and a firmer surface, not a precise timer sound. Slice thickness matters as much as oven temperature.

The skillet topping can be made during the oven interval. Stir the minced garlic in toward the end so it colors without scorching. One tablespoon of oil goes into the mushrooms and two are reserved for the polenta; the article and card should not inadvertently count only one.

Assemble right before guests eat

Spoon a modest amount of cooked mushroom mixture onto each warm round. Twenty-four servings means one topped piece each; party planning may call for more than one per person, which is a service decision rather than a change to yield.

If a log fractures when sliced, chill it and use a sharp knife. If pieces stay pale, check oil coverage and tray spacing before raising oven heat. A cheese topping would add a different allergen and change the pictured recipe.

Make-ahead boundaries

The topping and slices may be prepared ahead for a trial, but their final crispness depends on reheating and assembly. Do not promise that a fully topped tray will stay crunchy for a long buffet.

Check labels of seasoned prepared-polenta logs. A corn-based product is not automatically certified gluten-free or dairy-free. The separate holiday appetizer plan should keep these rounds distinct from bread crostini and mushroom toast.

Polenta bite questions

Is instant dry polenta interchangeable?

No. This recipe uses firm prepared logs; dry polenta requires cooking, setting and a different time calculation.

Why cook mushrooms separately?

The skillet evaporates their moisture before they touch the crisp polenta.

Can I add Fontina?

It would be an additional measured ingredient and a milk allergen. Test and document that variation separately.
